Last Night’s Workout

  • 30 minutes Adaptive Motion Trainer (AMT)
  • Ab Workout: 100 ball sit-ups, 50 side bends with 7 lb. weight, 25 standing crunches
  • Yoga Stretch – 30 minutes

Before going to Yoga Stretch last night, I fit in another quick workout…mostly because I had a little (or big) run-in with the kid’s Easter candy yesterday afternoon. Darn. Those. Jelly. Beans.

I made up for it by doing a little extra cardio and eating a healthy dinner.


For dinner, I made zucchini pizza bites. I also had raw veggies with hummus and apple slices with plain Greek yogurt with some PB2 mixed in.

I’m proud of myself for getting back on track right away after eating the candy. Sometimes, I’m like well, I just ate all that candy, might as well continue to keep eating bad. I already ruined everything.

I am really glad that I am starting to get away from that mindset. Eating some candy or ice cream won’t ruin your diet, but if you do it constantly, it might be a problem.

I picked up our race packets for Saturday’s 5k yesterday. Personally, I think the race shirts are a little oogly, but it’s not like I ever wear them anyway.

One of my favorite things in my race bag was a toothbrush, toothpaste, and floss. I mean how often do you get a toothbrush for running a race?!

I’m a little nervous about this race because we have to run 2.75 times around the course which is very narrow. If there is super speedy people and slower walkers, won’t the faster runners be lapping the slower runners on an already narrow course? And what’s up with 2.75 times around?

Oh well, I plan just to have fun at the race. Hopefully it won’t rain.

I think I’m going to buy new headphones tonight. I currently use the headphones that came with my iPod, but they always fall out and I am constantly having to fix them. It’s really annoying.

This is a pain when I am trying to run. Sometimes I run with music and sometimes I don’t, so I wasn’t sure if it’d be worth it to buy new phones. Then I figured that I would need them for the 15k anyway, so I might as well buy a pair that stays in my ears. I have also noticed that running with music helps me go a little faster.

I am thinking about buying these YurBuds In-Ear headphones. They received good reviews and are reasonably priced ($29.99). I really don’t want to spend anymore than that on headphones.


Hopefully these will stay in my ears and I won’t have to mess with them the whole time I’m running!

Quick Check In

Good afternoon and happy Friday!! Just a quick check-in because I am about to go to my hair appointment. I don’t even know why I bother to get my hair done since I don’t even do it anyway. Okay, sometimes I do. It’s just so much easier to throw it into a ponytail.


Last night we dressed up nice…and went to Whole Foods for dinner. Jaden really got into it:

We did try to go to a nicer restaurant, but the wait was an hour! On a Thursday! Crazy. So, we went to Whole Foods instead.

Today’s Workout

  • BodyPump – 60 minutes
  • Zumba – 60 minutes
  • Plank #29: 3 minutes and 15 seconds

Most of songs in Zumba today were new, so it took me a while to catch on, but it was such a fun workout!

Only two more planks to go! Actually, three. I missed doing a plank on March 1st, so I am going to make up for it by doing one on April 1st.

Tomorrow is the Egg Shell Shuffle 5k and it looks like the weather is going to be nice! The race also has a little bit of a later start time, 9:15 am, so that will be nice because we have to get the kids up and ready. I just hope parking isn’t an issue.

Speaking of races, I was looking through the flyers in my race bag and I came across a 5k that offers babysitting during the race.

How cool is that? I am lucky that I usually run with my family, so I can bring the kids with and my dad will watch them, or my mom will sometime watch them, but I know that some parents don’t have this luxury. I thought it was very cool that they offered babysitting during the race.


I have been eating the best snack lately. Vanilla Greek yogurt with a tablespoon of PB2 mixed it with Honeycrisp apple slices to dip in it! So good!

We’re having Easter brunch at our house, so I’ll be making my grocery list and shopping later today.

Jacob’s a Better Planker

Happy Friday!!

Last night around 9:45pm (when Jacob should have been sleeping), he overheard me telling Danny that I held the plank for 3 minutes and 6 seconds. Jacob yells out, The plank is easy! It’s not hard to do!

To which I responded, Alright then, get up and let me see you hold a plank that long.

Danny told me that I shouldn’t be getting his heart rate so late at night when he was supposed to be sleeping. I just ignored him. I have been working so hard on holding my plank for over three minutes, and I wanted Jacob to see how tough it actually is to hold a plank.

Jacob proved me wrong. My 11-year old got out of bed, and held the plank for 3 minutes and 25 seconds! What?! Danny says it’s because he doesn’t weigh anything and has less weight to hold up.

Then, Jacob says to me I could have held it longer, but you told me to stop and get into bed. Way to go, Jacob. Maybe he’ll be my plank coach :)

Treat Time

Last night after dinner, I realized that I still had quite a few calories left, so I splurged and had a Reese’s Peanut Butter Egg. The egg shape makes it so much better.

The calorie count isn’t horrible – 170 calories and 4 grams of protein. I’m sure it has lots of sugar though! Whatever. It was delicious.

Today’s Workout

  • Plank #22 – 3 minutes and 9 seconds (getting better but still not as good as Jacob!)

  • Stationary bike – 17 minutes, 3.05 miles
  • BodyPump – 60 minutes
  • Zumba – 60 minutes

My calves are a bit tight from yesterday’s run, so I foam rolled for about three minutes this morning (that’s all I had time for!), and I rode three miles on the bike this morning instead of walking on the treadmill.

My BodyMedia band finally broke all the way off the other day, but luckily the replacement band arrived the very next day, and it’s pink!!

It actually felt weird not wearing it for half a day because I am so used to it, but it was nice to get a little break from logging on my food on their website. I still write it all down on paper though. I write my food in a notebook and then I input it into the computer when I have time. It might seem a little time-consuming, but it really works for me!

We have plans to go to my dad and stepmom’s house tomorrow for dinner and to dye Easter eggs! We always have a great time getting together to dye eggs, and my dad usually comes up with the best decorating ideas. He is very secretive about it – he usually hides in the corner and won’t let us see what he’s doing.

Happy Friday!

I’m so glad that today is Friday. This week has seemed really long.

Yesterday, I started reading The Fault in Our Stars by John Green for Julie’s book club.

I really didn’t want to read it at first because it’s about a girl who has cancer, and I knew that I would probably be crying a lot. I downloaded the free trail on my Kindle and immediately loved it and purchased it right way.

It’s actually quite funny at times which I wasn’t expecting. Although the teenagers in the story don’t talk how normal teenagers do (they talk really smart), I think it works well for the book. I can’t wait to continue reading it. I haven’t cried yet, but I’m sure I will by the end of the book.


This morning I had Kashi cereal and almond milk – pretty  much my standard breakfast. I also take my vitamins every morning when I eat breakfast. On a regular basis, I take biotin (for my hair and nails) and a women’s multi-vitamin.

I buy the Target brand because I am cheap like that. I would love to take gummy vitamins, but I can’t find a gummy vitamin that contains iron. And believe me, I have looked.

I have had problems with low iron in the past, and although my iron levels are currently fine, I take a multi-vitamin with iron. If you’ve seen a gummy multi-vitamin with iron, let me know!

Today’s Workout

The kids didn’t have school today, so they went to the kid’s room at the gym. I checked on them after BodyPump, and they were doing good, so I stayed for Zumba.

I really am liking Zumba. Am I good at Zumba? No. But I really enjoy it. It’s such a fun workout. I think when you workout, it’s important to find something that you really enjoy doing. I look forward to Fridays because it feels fun.

I can’t dance to save my life, but I can follow along with the moves pretty well, even if I don’t have any rhythm. I am lucky enough to take classes where the instructors are helpful and encouraging, as well as the other students in the class. I feel like I can take Zumba and maybe look a little silly because I know the other women won’t judge me and are nothing but encouraging.

I think that is an important part of working out, especially in group exercise classes. You don’t want to feel intimidated or like you don’t know what you’re doing, so it’s important to find the right environment.

After the gym, I took the kids to get haircuts.

Jaden got a faux hawk, and the hair stylist showed him how to put this special cream in it that turned spiderweb-like on your hands and you let it float down on to your hair to make it stay longer. It was the weirdest thing that I have ever seen, but Jaden loved it.


I used the PB2 for the first time in my peanut butter French toast, and it was really good. It worked just as well as regular peanut butter.

I usually use one tablespoon of regular peanut butter with 95 calories, but with the PB2, I can use two tablespoons for only 45 calories. More peanut butter + fewer calories = awesome!

It’s St. Patrick’s Day on Sunday! I am making corned beef in the crock pot. I found two recipes on Pinterest that I am going to use bits and pieces from, and hopefully it’ll be good!

Happy Friday!

Happy Friday and first day of March!


I’m very happy to say that I ate good all day yesterday. For dinner, I had spaghetti squash with veggies, marinara sauce, and feta cheese.

It was so good, and  spaghetti squash is a great substitute for pasta.

I had 6.5 ounces of spaghetti squash and the total calories for the whole dish (with sauce, veggies, and feta) was 235 calories. If I had made it with 6.5 ounces of spaghetti instead it would have been approximately 475 calories. So, I am saving calories, carbs, and getting my veggies in!

I honestly don’t miss the pasta noodles. Yes, I think it’s fine to eat pasta, but I like spaghetti squash, so I eat it :)

I like making simple substitutions like the squash for the pasta noodles because it means that I have some extra calories for a treat! I picked up these Skinny Cow peanut butter creme treats to try out.

Peanut butter and chocolate?! Yes, please.

Today’s Breakfast

Breakfast this morning was such a great idea, and so delicious I felt like I was eating dessert. I mixed one tablespoon of PB2 into a vanilla Greek yogurt.

So. Good.

I think I might have this as an after dinner treat with a few chocolate chips thrown on top.

The kids didn’t have any school today so they came to the kid’s room at the gym with me.

I checked on them after BodyPump, and they were doing good, so I stuck around for Zumba. Fun times. Fun times.

The rest of the afternoon will be spent making lunch and doing some laundry and stuff.

Tomorrow, we’re going to my grandparent’s house for a game night and chip tasting party.

Lay’s just came out with three new flavors – chicken & waffles, sriracha, and cheesy garlic bread – and I think people can vote for their favorite flavor on their website. ( I had to google sriracha. It’s a hot sauce from Thailand).

I am not excited about the chicken and waffle flavor. It just sounds weird, but we’re going to have a fun night tasting them all!

Dance Off

Happy Friday! Can you believe that it’s the last weekend of February?! Time sure flies when you’re old…er than five.


Last night, we had “make your own mini pizza” night, using mini bagels and English muffins.

They say that if you let kids help make their own food, they’ll be more likely to eat it. Yeah, not true with my kids. Jaden had the best time making his mini pizza, but when it was done, he wanted nothing to do with it.

He told me that it wasn’t sweet, like normal pizza. I don’t know what kind of pizza you’re eating, kid, but give some to me.

Jaden also insists on wearing his Abraham Lincoln hat from President’s day. I think Jaden feels a special bond with Lincoln because they share a birthday…and he likes pennies.

I haven’t been to Zumba in a couple of weeks, so I decided to stick around today. And I’m glad that I did because we had a dance-off in Zumba today. We formed two groups and the first group did their best booty shaking moves while the other group watched. Then, the second group did their best booty shaking moves. I’m pretty sure we won…

My secret wish is life has always been to be involved in a) a dance-off or b) a flash mob dance. Secret life dream fulfilled! :)

My second favorite part of Zumba was dancing to the lyrics, My girl got a big ol’ booty, Your girl got a little ol’ booty. Does working out really get any funner than that?! No, no it doesn’t.

After the gym, I stopped at the grocery store to pick up some gallons of water. I have been really forgetful lately – a few weeks ago, I bought a bag of Honeycrisp apples (expensive!) at Target and when I got home, I realized I never put them in the cart after I paid for them. Then, yesterday, I bought three gallons of water and ended up leaving those in the cart after I paid for them. Darn. And the store wasn’t very close, so I just couldn’t go back and get them.

Anyway, whenever I go to the grocery store, some invisible force greater than me always makes me walk down the seasonal candy aisle where I stare lovingly at all the candy. And now they have Easter candy out. Sigh.


I love jelly beans. I love them. But luckily, I was strong enough and I resisted those delicious stupid jelly beans. I really need to stop walking down that aisle and torturing myself.

My dad’s birthday is Sunday and my stepmom’s birthday is Monday, so we’re going over to their house tomorrow to celebrate and there will be cake involved! I guess I better spend a little bit of extra time in the gym tomorrow morning…

Mini Apple Crisp

I had the most delicious breakfast this morning – a mini apple crisp!

For some reason, I went to bed last night wanting baked apples, which is weird because I rarely eat cooked apples, and I’ve only made apple crisp once in my life. So, when I woke up and was still thinking about those baked apples, I decided to make a mini apple crisp.

The recipe is so simple and easy to make, and it came out delicious!

Mini Apple Crisp – Serves 1    Calories: 104


  • Apple, peeled and cut into chunks (I used 3.5 ounces of a Honeycrisp apple)
  • 1 tsp. brown sugar
  • 1/2 tsp. cinnamon
  • 2 tbsp. oats (I used Quaker Old Fashioned Oats)


  1. Pre-heat oven to 350 degrees. Place apples in a small baking dish.
  2. Stir in brown sugar, cinnamon, and oats. (I stirred one tbsp of oats in with the apples, and sprinkled the other tbsp on top of the apples.)
  3. Bake in a pre-heated oven for about 20-25 minutes or until apples are tender.

That’s it! So simple and good! The best part – the whole serving is only 104 calories!

I ate my apples with a Greek yogurt for some protein.

Even though I ate the mini apple crisp for breakfast, I think it would make a wonderful dessert. I might start eating this as a dessert at night with a bit of vanilla Greek yogurt or even ice cream!

I had quite the workout this morning! Even though I still can’t dance and have no coordination whatsoever, I still really enjoy Zumba. The class is really fun and goes by fast.

After Zumba, I spent a little time taking a bike ride through the redwood forest.

After the gym, I stopped at the grocery store to pick up all the ingredients to make chili for our family chili cook-off on Sunday! Even though I don’t eat chili, I have Danny as my taste tester.

The grocery store is right across from Dunkin Donuts, so I had to stop in and pick up something that I saw on Facebook this morning…

Caramel K-cups! I had a Dunkin Donut gift card and this was the perfect opportunity to use it! I can’t wait to try one out tomorrow.


Lunch this afternoon was an Amy’s frozen pizza, veggies with hummus, and strawberries.

I almost couldn’t find the pizza in our freezer, and I was starting to get crazy because I was really craving pizza. Luckily, after I dug every single thing out of the freezer, I found it hiding in the back. Yes! These pizzas a little higher in calories than my normal lunch, so I like to save it as a treat on a Friday or Saturday. 400 calories for the whole pizza and 16 grams of protein.

I was Hungry and a 15k Training Program


Last night for dinner, I had Subway.

Not only did I have Subway, but I had a foot long sandwich (Don’t worry – I’m not crazy enough to measure my sandwich). I never eat a foot long sandwich. But after three days of smoothies for dinner, my body was like if you don’t eat something with substance and carbs, I am going to revolt by eating a giant cheese stuffed pizza and a huge plate of fries.

Not one to argue with my body, I figured that a foot long veggie sub and baked chips from Subway was a lot better to eat than a giant stuffed pizza. I was hungry, and I wanted to eat. I did eat a little more than my normal calorie count, but I didn’t go overboard like I sometimes would have in the past. And, I have Danny to help keep me on track.

Plus, the weekend is coming up and I rather have a treat on the weekend than on a random Thursday night.

I also might have stolen one or two (okay, three) of the kid’s potato faces.

Those little cute potatoey faces are really good, but they freak me out a bit…

I didn’t go to the gym last night because my body needed a rest. I have been working out a lot lately because of the fantasy fitness challenge at my gym, and sometimes I just need a little break. I feel like it’s smarter to listen to my body then push myself to exhaustion or injury. Yes, I really want to win a free one year gym membership, but not enough to jeopardize my health.

Don’t worry, I was back at the gym this morning :)

Cardio Vs. Strength Training

The other day in my fitness class some of the ladies were talking about their favorite fitness classes. I was the only one who preferred BodyPump over cardio classes. Everyone seemed to love the cardio classes. I like the cardio classes too, but BodyPump is my all-time favorite (which is why I do it three days a week).

I used to only love cardio. Two years ago, if you ever saw me in the gym, I would be on the treadmill, elliptical, or stairmaster. Now, I have a good balance between strength training and cardio.

BodyPump transformed my body in ways I never thought possible. I lost 30+ pounds and can see toned muscle now. It’s amazing.

Cardio is important to keep your heart healthy of course, but strength training builds muscle which helps you burn even more calories at rest. Muscle tissue burns more calories than fat tissue. I’m not saying that you have to take BodyPump three times a week, I’m just saying if you’re a cardio queen like I used to be, maybe try adding some strength training into your routine.

I didn’t have to watch my niece today, so I debated staying for Zumba after BodyPump this morning. I figured if the instructor who is 20 weeks pregnant has the energy to teach class then I should be able to take the class…so I stayed for Zumba.

Plus, Zumba is a such a fun workout that doesn’t actually feel like a workout. And by 1pm, I was already at 13,000+ steps for the day! Awesome.

Since I worked out a lot longer this morning, I had a little bit bigger post-workout snack than I normally do.

15k Training Plan

I figured if I am going to run nine miles then I better do a little bit of training because my typical mileage is anywhere from 1-5 miles, not nine.

I found a Hal Higdon training program online, and decided that it would be the one I would use. I have heard lots of good things about Hal’s plans, and liked that it’s 10 weeks long and simple to follow.

I probably will have to switch the days around to fit my schedule, but it’s basically two days of running, one long run that increases in mileage each week, and cross training. I’ll probably do it for more than 10 weeks, since I have time, and just repeat some of the weeks.

After the gym, I had a few errands to run. Tonight, we’re going to drop my car off at the mechanic because it’s having problems with the power steering fluid. Great.

Cola Pork Chops

Good morning! Happy last day of November!


Last night for dinner, I made cola pork chops, and I thought I’d share the recipe.

Cola Pork Chops    Serves: 4


  • 1/2 cup ketchup
  • 1/2 cup cola
  • 1 tbsp. brown sugar
  • 4 pork chops
  • flour to coat
  • salt and pepper to taste


  1. Coat pork chops in a light layer of flour and brown lightly in a skillet (If you’re pressed for time, you can skip this step. They will still turn out good!)
  2. Preheat oven to 350 degrees. Mix together the ketchup, cola, and brown sugar in a small bowl.
  3. Place pork chops in a baking pan and pour cola mixture over them, coating well. Sprinkle with salt and pepper.
  4. Bake 30-60 minutes, depending on the thickness of your pork chop.

I don’t drink coke or eat pork chops, but Danny vouched for me and said these pork chops were delicious.

This little lady like the mashed potatoes.

The secret to awesome mashed potatoes? Use milk warmed in the microwave and a bit of cream cheese. Yum!

The Weekend

We have a lot going on the weekend. Tomorrow morning, Danny has to work and Jaden has an allergy appointment. Then, later in the afternoon, my mom is coming over to watch the kids so Danny and I can see a movie and go out to dinner. I can’t even remember the last time we saw a movie or ate dinner alone together, so I am really looking forward to it! Thanks, Mom!

Sunday, we’re going with my family to cut down a Christmas tree. We don’t mess around when it comes to Christmas trees. We go to the same Christmas tree farm every year. It’s about an hour away, and we get a saw and head out to the fields on a horse-drawn carriage to cut down the perfect Christmas tree. The we drag the tree back and have hot cocoa while it gets wrapped up. Then, we spend way too long trying to get it tied to the roof of the car.

We didn’t have any snow for cutting down trees last year, and this year is supposed to be decent weather too. Hopefully, it won’t rain.

Flashback Friday

Danny found this picture in his phone last night – it’ probably three or four years old.

It makes me miss my long hair so much!! I cut my hair right before my brother got married about two and a half years ago, and it still hasn’t grown back! My hair grows sooo slow. It’s sad.


I have a lot of errands to do after the gym today, so here is my projected workout for this morning:

Busy, Busy, Busy

Wow – today has been a nonstop busy day! It’s after 3pm, and this is the first time that I have sat down at my computer all day. I feel like I’m ready for a nap :)


Breakfast this morning was fast and simple – toast with peanut butter, egg whites, and blueberries.

This morning was kind of crazy and everyone (read: me) was crabby. Jaden ended up missing the bus, and I had to drive him to school so I was late getting to the gym.

Today’s Workout

  • 1 .02 miles treadmill
  • BodyPump – 60 minutes
  • Zumba – 60 minutes

Total Pile on the Miles: 27.7

I still managed to get to the gym in time to speed walk/jog one mile on the treadmill before BodyPump. After BodyPump, I stayed for Zumba again. I had a really stressed out morning, and I love Zumba because I feel like it’s a great stress reliever. You can just listen to the music and dance! I felt a lot better after working out.

Today was parent visitation day and lunch at Jaden’s school, so after the gym, I came home and took a quick shower. On parent visitation day, the parents can come eat lunch with their kids, so I always stop and bring a special lunch. I stopped at Subway for myself and McDonald’s for Jaden.

In case you forgot what I look like:

Instead of chips with my sandwich, I had these Pillsbury Italian cheese and herb baguette chips that I got in the mail yesterday.

They were okay, and I ate them, but I don’t think I would ever buy them myself.

I ate lunch with Jaden and then we played on the playground.

Fridays are the day that I volunteer in Jaden’s classroom, so after lunch and recess, I stayed to help out. I usually do things like help the kids with stuff they’re working on, pass out papers, make copies, etc. That kind of thing. And I’ll admit – it took me awhile to get the hang of the copy machine but now I’m an old pro! Trust me, that copy machine is crazy.

I can’t stay the whole afternoon at school because Jacob gets home before Jaden gets out of school, so I stay until the last second that I possibly can, and then book it home to get home before Jacob.

So, now I am finally home and plan on relaxing for the rest of the afternoon. Jacob is impatiently standing over my shoulder waiting to play Minecraft. I only let the kids play on the weekend, so by the time Friday comes, they are ready to play.

I hope you all have a great weekend! I am excited for tomorrow – we’re going to my grandparent’s house for a fish fry and to make pumpkin rolls!
