Alexia Sweet Potato Fries + A Giveaway!

Good afternoon! For some reason, I am exhausted today. Is anyone else tired? I feel like I could sleep for a long long time.

I still made it to the gym this morning though :)

Today’s Workout

  • Plank #14: 2 minutes and 56 seconds
  • 4 miles, treadmill
  • Stretching – 10 minutes

Instead of going to Step Class this morning, I decided to run on the treadmill. I ran for about 3.3 miles and walked the rest. I finished up with some much-needed stretching.

Post-run, I had a Designer Whey triple chocolate crunch bar. I think this flavor might be even as good as the peanut butter flavor!

Lunch

Lunch this afternoon was extra delicious because it included  Alexia Sweet Potato Fries!

I love French fries. If I don’t order them when we go out, I always make sure that Danny orders some, so that I can steal a few.

I was really excited to try the Alexia sweet potato fries because they are so much better for you than regular potatoes, and they’re all ready to go right into the oven! Sometimes making your own sweet potato fries can be time-consuming, and I’m all about time-savers.

Sweet potatoes are good for you because they’re high in fiber, contain vitamin B6 which is good for your heart, are rich in beta-carotene (vitamin A), as well as vitamins C and E.

I had my sweet potato fries alongside my bagelwich for lunch.

I even got my niece to try them. First, she stared at them for a while.

Then she decided that they were okay to taste.

Finally, she loved them so much that she had to savor the taste!

A Veggie Filled Lunch

Happy Monday! I hope that everyone had a nice weekend! We spent pretty much the whole day just relaxing yesterday – it was nice. :)

Today’s Workout

  • 1.06 miles treadmill, walked
  • BodyPump – 60 minutes
  • 2.1 miles treadmill, walked

I have three pairs of shoes that I workout in on a regular basis. I wear a pair of Asics for everyday fitness classes (BodyPump, Butts and Guts, Zumba, etc).

For running, I usually wear my Asics GT 2160s or my Mizuno Inspire 9s. I wear the Asics most of the time, but I do like to switch them up a bit. Well, I noticed over the weekend, that there are chunks of shoe missing from the inside of my Asics.

And these shoes aren’t even that worn! How does that even happen?! This is the only pair of shoes that I own that have ever done that before.

Since I pretty much can’t run in them now, I will be buying a new pair soon. I love running in Asics, but have also heard lots of good things about Brooks running shoes. Hopefully, this weekend sometime, I’ll be able to pick up a new pair.

Before leaving to go to the gym, I mixed up a protein shake for a post workout snack. I always bring a snack with me to the gym because I usually pick up my niece directly from the gym.

I used the EAS Lean 15 protein powder…and honestly, I didn’t really enjoy it just mixed with water. I usually use a scoop in my smoothies, and I prefer that over drinking it straight. It wasn’t bad, it just wasn’t delicious.

Lunch

Today’s lunch was packed full of veggies (which was much-needed after a weekend of pizza, cake, and french toast).

I sautéed lots of veggies – red onion, zucchini, green pepper, broccoli, spinach, and garlic with a little bit of olive oil, then I served them over scrambled egg whites.

I also had a clementine and a Greek yogurt on the side.

Zucchini Pizza Bites

Good afternoon!

Today’s Workout

  • 4.03 miles, treadmill

I started out my morning with a workout on the treadmill. I ran for three miles and walked for one mile.  Nothing too exciting.

After my workout, I went to pick up my niece, and we stopped at Target. I tend to eat the same stuff a lot, so I have browsing around on Pinterest and other blogs for some different meals to make.

I came across zucchini pizza bites on the blog Skinnytaste, and decided to try them out. At Target, I picked up a zucchini and some pizza sauce.

Zucchini Pizza Bites

These zucchini pizza bites are low in carbs and calories but really help satisfy the craving for pizza. I honestly didn’t even miss the pizza crust!

Ingredients:

For my pizza bites, I used:

  • 1/2 zucchini (4.2 oz)
  • 1/4 cup mozzarella cheese (this ended up being a bit too much, and I’ll probably use a little less next time)
  • 2 tsp. grated Parmesan cheese
  • 2 tbsp. pizza sauce
  • pepper to taste

I found Classico fire roasted pizza sauce at Target that only has 25 calories for 1/4 cup. I used 2 tbsp. of sauce which is only about 13 calories.

First, I cut half of a zucchini into rounds. Mine zucchini made seven rounds. I saved the rest of the zucchini to make them tomorrow too :)

Then, I sprinkled them with a bit of pepper and broiled them for about three minutes in the oven. When they came out of the oven, I topped them with the pizza sauce and cheese. I had a lot of cheese, but I just piled it on. Cheese is good.

Then, I broiled them for about another three minutes, and they were done! They came out perfect and we’re delicious. For all seven zucchini pizza bites, it was only 133 calories and 10.9 grams of protein.

These would make a great snack, but I ate them for lunch with some Greek yogurt for extra protein.

Apple cinnamon Chobani Greek yogurt topped with cinnamon Cheerios is the best yogurt/cereal combination ever.

I’m kind of proud of myself for trying some new foods lately – zucchini bites, hummus melts, broiled grapefruit. I consider myself kind of a picky eater, so it’s nice to be able to branch out a bit.

I also look for recipes that are quick, easy, and don’t require too many ingredients. With two kids and my niece here in the afternoons, I need lunches and dinners that are fast and easy.

Monday

Monday…again.

Every Monday I come on here and complain about how much I ate over the weekend and about how my weight is up blah, blah, blah. I’m sick of it. I’m sick of overeating on the weekends and undoing all the hard work I’ve put into losing 30 pounds.

I think it’s all about baby steps. And my first baby step is to cut way back on the sugar. I eat too much sugar. I have a huge sweet tooth. When I eat sugar, it makes me crave more sugar. Then before I know it, I’ve eaten ten Hershey kisses and half a Dove bar. And once I start on the treats, I have a hard time stopping. I’m not the kind of person that can eat two Hershey kisses. I need five. So, for me, it’s better not to start with even one Hershey kiss.

So, my mini goal for this week is to cut back on the refined sugar – no candy, ice cream, chocolate, etc. Even though fruit and yogurt have a lot of sugar, I still plan to eat those because they’re a whole lot healthier than candy hearts. It’s all about baby steps. I’m hoping that by controlling my sugar intake it will help me to eat a bit better on the weekends.

Okay, enough complaining….

I have to share my intense love for the Golden French Toast coffee.

If you have a Keurig, I recommend buying it! I usually like darker roasts, but this flavor is delicious!

Today’s Workout

  • BodyPump – 60 minutes
  • 1.12 miles treadmill, ran

Since today is President’s Day, there was no school and the kids came to the gym with me. I don’t like leaving them in the kid’s room for too long, but I wanted to get a bit of cardio in after BodyPump, so I just ran a quick mile on the treadmill.

I found these workout tanks at Meijer over the weekend on sale for only $7.50. This one is gray and hot pink, and I also got one in hot pink and neon yellow. I think they’re so cute, and they were cheap. Who knew you could find cute workout clothes at a grocery store?

I’ve also heard that Costco has some pretty good workout clothes.

Lunch

I used half of the Peanut Butter & Co. package on toast yesterday for breakfast, and I used the other half in my smoothie for lunch today.

Yes, that is a Yogurtland spoon that I’m using. Reduce, Reuse, Recycle :)

In my smoothie:

  • strawberries
  • blueberries
  • peanut butter
  • plain Greek yogurt
  • almond milk
  • crushed ice

I also topped it with a tiny bit of granola for some crunch.

On a totally unrealated note…the new season of the Amazing Race started last night! Anyone watching?

Yesterday evening, Danny brought me home the best Valentine. It wasn’t chocolate. It wasn’t flowers. It was…

…coffee!! ( I don’t know why my head is so weirdly tilted).

I was way more excited for the coffee than I was for the chocolate covered strawberries (which were delicious, by the way). I have been looking for the Golden French Toast coffee everywhere, and I haven’t been able to find it. I mentioned how hard it was to find the other day, and Danny went out to Wal-Mart near his work and was able to find it!

Now, I know he really loves me…I wasn’t too sure before :)  I also know that I have an odd obsession with coffee. I’ve got my eye on that Keurig Vue coffee maker…too bad the thing cost $200!

Dinner

Our dinner last night was very nice. We had a candlelight dinner with every candle I could find in the house, and the kids got to order off their menus. It was a lot of fun. After dinner, Danny took Jacob to archery, and we had dessert when they got home.

I ate a lot.

Today’s Workout

  • 9.33 miles treadmill (!!!!)
  • 15 minutes stretching

Yes, you read that correctly – I ran 9.33 miles today!!

I decided not to go to BodyPump this morning and run on the treadmill instead. I was feeling good so my goal was to finish 5 miles in under an hour. I finished 5 miles in 55:34. Then I figured why not keep going?

I didn’t have to pick my niece up today, so I had some extra time to spend in the gym. I completed 9.33 miles in one hour and 51 minutes. I was able to run the first five miles without stopping at a slow and steady pace. After five miles, I had to incorporate some walk breaks.

I felt awesome, especially because I tend to stick to 3 or 4 miles at a time. 9.33 miles is my second longest distance. Bring on The Biggest Loser 15k!

Post 9.33 miles:

I wore my calves sleeves during my run, and surprisingly, my right quad is the most sore right now. I did make sure to stretch after my run. Maybe I should pull the foam roller out…

According to my BodyMedia Fit , I have taken over 17,000 steps and burned over 1800 calories by 11 am! A good way to start the weekend!

Valentine’s Day

Happy Valentine’s Day!

My wonderful husband is so funny…and knows me too well. This morning, sitting on the kitchen table was an empty bag of candy hearts…and a snack size Ziploc filled with 10 candy hearts.

I was kind of confused at first . Then Danny told me that he know how much I love candy hearts but always get mad at myself for eating way too many. So, he opened the bag and pre-portioned all of the candy hearts into single serving bags! Each bag has 10 candy hearts and is 120 calories.

Oh, and he brought all the other bags to work with him, so I couldn’t eat them even if I wanted. Well played, Danny. Well played.

Oh my gosh, I love him. He said he wasn’t sure how I’d take it – if I’d be mad or think it was funny. I thought it was pretty clever of him to come up with that. And it made me realize that ten candy hearts for 120 calories sure seems like a lot.

He also got me delicious chocolate covered strawberries.

My wonderful Dad also got me a little present.

Wine glasses filled with chocolate! What a sweet Dad I have :)  He also got a tiny bottle of Godiva liqueur for me and a tiny Jack for Danny.

I left a trail of Hershey kisses down the stairs for the kids, and they both had a little present waiting for them on the table. And yes, those are Christmas Hershey kisses. I had a whole bag leftover!

I’m saving all my Valentine’s treats for later and started the day off by heading to the gym.

Today’s Workout

  • 4.59 miles, treadmill

That’s the farthest I’ve gone in a while!

My right calf is still very tight and sore, so I wasn’t able to run too much. I alternated between walking and running for about an hour.

Awhile ago, I has diagnosed with compartment syndrome basically meaning my calf muscles are too tight in their sheaths. Some days they are worse than others, but lately they’ve been pretty sore. I am trying to remember to stretch and foam roll and will slowly try to ease back into running.

Post workout snack was a cranberry almond simple bar.

This afternoon, I am have Jaden’s Valentine’s Day party at school, and when we get home, I’m going to make our special Valentine’s Day dinner.

On the menu:

  • Caesar salad
  • Stuffed shells
  • Garlic bread
  • Funfetti cake (and chocolate covered strawberries!)

My sprinkles got a little crazy.

Weigh-In Wednesday

Good morning! I have to start off with the weigh-in for DietBet because I am very excited! Since last Wednesday, I have lost exactly 4 pounds! That means I have lost a total of 5.4 pounds since Danny and I started the DietBet.

The best part is that I am finally below the weight that I was stuck at for four months. My scale hasn’t budged since I finished the Biggest Loser back in September. Now, I am down 5.4 pounds, and I have 15 days to lose .6 of a pound, and I will win my DietBet! I’m very happy if you can’t tell :)

I think the biggest factor is my weight loss has been the weekend eating. I have been a lot better at sticking to healthy eating during the weekends, which is hard sometimes, but it’s worth it when I see the difference that’s it’s made.

Yes, Danny and I went out to dinner last weekend, and ate a lot more than we usually do, but the next day, we were right back on track. I think that shows that one meal isn’t going to ruin your healthy eating and cause you to gain weight. As long as one meal doesn’t turn into overindulging the whole weekend, it usually won’t hurt. Hey, I ate a pizza and cheesecake and still lost 4 pounds!

Yes, Danny, I could hardly believe it either!

On the other hand, what works for me might not work for you. Everyone is different, and loses and gains weight differently. Don’t go out and eat cheesecake saying you’ll lose weight just because I did. But eating healthy and focusing on whole foods and less processed foods can benefit everyone.

Enough about me – Danny also weighed in today. He lost 1.8 pounds this week, and 12 pounds total. Great job, Danny! He is already at his 4% weight loss, so as long as he doesn’t gain any weight he’s good.

It was to be expected that he lost a smaller amount this week since he lost 10 pounds last week, but he is still doing awesome!

The hardest part will be the Superbowl – who doesn’t love snacks and beer at a Superbowl party? (Well, I hate beer, but others enjoy it. Danny) Luckily, the DietBet ends four days after the Superbowl, so even if we have a few snacks, we still have four days before we have to weigh in.

Last Night’s Dinner

Another smoothie!

I have been loving smoothies lately. I’ve jumped on the smoothie bandwagon…too bad I decided to do it in the middle of winter. They make me cold.

Last night’s smoothie included:

  • frozen strawberries
  • frozen blueberries
  • almond milk
  • crushed ice
  • plain Greek yogurt
  • vanilla protein powder
  • chia seeds
  • a little water

I also ate it with about 1/4 cup of cinnamon Cheerios for a little bit of crunch. The smoothie with the Cheerios was 309 calories and 24.7 grams of protein!

Today’s Workout

  • AMT Machine – 15 minutes
  • BodyPump – 60 minutes
  • 1.62 miles, treadmill

My gym got a new treadmill that I really like.

After my workout, I treated myself to a McDonald’s coffee…mostly because I was freezing and the coffee was hot.

Lunch

I was hungry by the time lunch rolled around today, so I made myself a cheese and veggie quesadilla, brussels sprouts, and a clementine.

Yum!

Weigh In Wednesday

I finally stepped on the scale this morning. I haven’t weighed myself since before Christmas because I was nervous about what the number would be. I’m glad that I joined the DietBet because I feel like I would have just continued to put off weighing myself because I didn’t want to see the number. And that’s how I ended up gaining the 30+ pounds that I recently lost – by not weighing myself.
I know that some people don’t agree with weighing themselves a lot, and go by how their clothes fit and such rather than placing your worth on a number on the scale. But for me personally, weighing myself a few times a week helps keep me accountable. If I don’t, my weight slowly starts to creep up.

I am happy (and surprised) to say that I weigh exactly what I did before Christmas! :) I know that I gained weight around the holidays, but this past week of eating right and sticking to my daily calorie count helped me lose a few pounds I think.

While I am happy that I weigh the same, I think it’s going to make the DietBet a little bit harder. I only weigh two pounds more than weight that I am unable to drop below. My weight has hit a plateau at a certain number for months that I can’t drop below, and the DietBet requires me to lose approximately 6 pounds, so that is going to be a very hard challenge.

Six pounds might not sound like a lot to lose in four weeks, but when I’ve only been able to lose two more pounds than I weight now, six pounds will be difficult. But I’m up for the challenge!

The other day I went to the grocery store and I came across this Special K protein water mix.

I drink one cup of coffee in the morning and the rest of the day I drink water. That’s it. I love water, but sometimes it gets a little boring. Since I’m always looking for ways to get in extra protein, I thought these protein drink mixes would kill two birds with one stone – extra protein and flavored water.

One packet has 30 calories and 5 grams of protein. I’m excited to try them out.

Today’s Workout

  • 2.64 miles, treadmill

I had limited time at the gym this morning because we had to go to a doctor appointment, so I tried to make the best of my time by doing a HIIT workout. I walked at 4.0 for one minute and ran at 7.1 for one minute for a total of 30 minutes. I wasn’t able to go to BodyPump this morning, but I hope to go to yoga tonight.

I wore my new Mizunos to run:

For an afternoon snack, I had a Clif bar that I found in my purse from when we went to the museum.

Sorry I ate your Clif bar, Danny.

I stopped at Target this afternoon, and was excited to find these mini Clif Builder bars with 140 calories and 10 grams of protein.

I really like the Builder bars, but rarely eat them because a full size bar has 270 calories which is a little bit too much for one bar for me.

Later this afternoon, I’m going to bring my brother home from the hospital. He is finally being released today. And even though he’s still in a decent amount of pain, it’ll be nice for him to be at home.

I just have to share these pictures of my niece because she is so funny. As soon as Danny gets home from work, she wants him to pick her up so that she can hug her reflection in the mirror.

After she hugs herself in the mirror a few times, she goes and gets the picture of herself and hugs that too! It’s so darn cute and funny!

Surgery Fake Out

So, my brother ended up not getting back surgery yesterday. Oh, he went to the hospital, got prepped for surgery, and was knocked out by the anesthesia, but never got surgery.

It turns out that the doctor found some kind of infection and were unable to operate. Better to be safe than sorry. So, now he has to take an antibiotic, come back next week, and do everything all over again.

The worst part is that they had already given him the anesthesia, so he had no idea that he wasn’t getting the surgery. So, when he woke up the doctor had to explain that he didn’t get the surgery, his back isn’t better, and he has to come back next week. Oh, and he left the hospital in worst shape than when he arrived.

My poor brother can’t catch a break.

I took my niece home so that my sister-in-law could get my brother home and settled. And we’ll do all this again next week.

Today

Breakfast this morning was Kashi oatmeal with peanut butter.

After the kids and I ate breakfast, we headed to the gym.

Luckily, my niece did good in the kid’s room since Jacob and Jaden were in there with her.

Today’s Workout

  • 3.12 miles, treadmill

I didn’t want to leave the kids for too long, so I just ran/walked a quick three miles on the treadmill.

Danny and I are officially signed up for DietBet! Anyone else joining? It starts January 10th.

New Year’s Eve 2012

Good morning and Happy New Year’s Eve!

Today’s Workout

  • 3.39 miles treadmill

I started my morning out at the gym. My gym didn’t have any fitness classes today, so I just ran on the treadmill.

I alternated between walking for one minute at 4.0 mph and running at 7.1 mph for one minute. I know the 7.1 is weird, but the .1 makes me feel faster :)

I can’t believe that it’s the end of 2012 already! I thought I would highlight some of my favorite times.

Some of my favorite things from 2012:

  • Danny and I celebrated our 6th wedding anniversary.
  • I ran the Dash and Dine 5k with my family. I ran 3.1 miles and then ate the grossest bread pudding as fast as I could. (April 21)
  • I joined a Spring weight loss challenge and came in first place! I lost 22 pounds and 12.8% of my body weight. (June 8th)

  • I went on to join The Biggest Loser at my gym and lost another 11 pounds. (I lost 30 pounds total because I gained a few pounds back after the spring weight loss challenge). At the conclusion on the Biggest Loser, I ran my fastest 5k.

  • We had a random pirate night, an Amazing Race game, and an awesome Halloween party.

  • I received my first 5k medal, and was very excited!

  • I won fitness bingo and won a free three-month gym membership.

2012 was a really great year, and I hope to make 2013 even better!

We usually do the same thing every New Year’s Eve – go out to dinner with my family and then go to my dad’s house to ring in the new year. Last year, we dressed fancy and went to Olive Garden. This year we’re going to a nearby Mexican restaurant. I am very excited because I love Mexican food.

We’re also having a New Year’s hat contest at my dad and stepmom’s house this year. Every year, my dad buys us all New Years hats, but this year we’re having a contest to see who can come up with the best hat! Top secret until tonight!

We also started a time capsule a few years back. Tonight, we’ll open it, look at the stuff we’ve put in the past few years, and then add new stuff.
