Yesterday’s Dinner

Danny wouldn’t shut up about there being no chili leftovers, so yesterday I decided to be a nice wife again, and make another batch of chili for him. Since I spent all day cooking, I just wanted to make something simple for myself for dinner, so I made frozen tilapia.

Then, I got the brilliant idea to top it with the mango salsa that I picked up from Whole Foods over the weekend.

It was delicious. Just a little bit of mango salsa turned by boring frozen fish into a tasteful dinner.

Today’s Breakfast

I am still thinking up ways to use pumpkin butter, and I decided to use it to make some overnight oats – pumpkin chocolate chip overnight oats.

Last night I mixed up:

  • 1/4 cup oats
  • 1 container plain Greek yogurt
  • 1/4 cup almond milk
  • 2 tbsp. pumpkin butter
  • 1 tsp. chia seeds
  • 1/2 tbsp chocolate chips
  • dash of pumpkin pie spice and cinnamon

I stirred everything together and let it sit in the fridge overnight and this morning I enjoyed a pumpkiny breakfast!

I want to try this recipe again but without the yogurt, so it’s thicker, more like a pumpkin cookie dough.

Today’s Workout

  • 2.05 miles treadmill
  • Butts and Guts class – 60 minutes

After the gym today, I went to TJMaxx and bought a jean shirt.

It’s one of those things where your just driving down the road and you’re like, holy smokes, I need a jean shirt. Or something like that. Maybe it’s the 80′s child in me that loves the jean so much. I do own a fanny pack after all.

Lunch

Lunch today was a sandwich and tomato soup.

The perfect warm lunch for a chilly day. The weather is finally starting to feel like fall here in Chicagoland!
