Snacks On The Go

Good afternoon. Today has been busy, busy, busy!

Last night, Jaden woke up at about 10 pm screaming about ear pain. He was up a lot during the night, which meant Danny and I were up a lot last night also. Needless to say, Jaden didn’t go to school this morning.

My morning started with two cups of coffee, and I stopped at McDonald’s later in the morning for another cup. So tired.

Today’s Workout

  • BodyPump – 60 minutes
  • Plank Day #4 – 2 minutes and 36 seconds

Jaden was able to get an 11:15 am doctor appointment to get his ear checked, so I did my plank-a-day at home, then headed to BodyPump. Right after the gym, I took Jaden to the doctor. Turns out that he has a double ear infection. Poor baby.

Right from the doctor, we went to the pharmacy to fill his antibiotic. Then, we went straight from the pharmacy to pick up my niece.

When we left the pharmacy, it was about 12:30, and I was starting to get hungry (I had a Builder Bar after BodyPump at about 10:20 am). Luckily, I also packed a yogurt tube to bring with, so I ate that.

Whenever I leave the house, I always pack snacks or have a protein bar that I keep in my purse or car. Apparently, I am afraid of starving if I’m out of the house too long. Plus, whenever we get the car the kids are always suddenly hungry, so I am packing snacks for them anyway.

The nutritionist that we meet with during the Biggest Loser program at my gym said that it’s actually good to have healthy snacks that you keep in your car. Not only are they good for post workout snacks, but if you’re out on the road, having a healthy snack is better than stopping at a fast food drive thru. And they’ll help curb your hunger so that you don’t overeat when it is time to eat.

I know that car isn’t the best place to eat, but sometimes you have to. It’s important to have a post workout snack, and I always go pick my niece up directly after the gym, so I always eat my snack in the car.

Great choices for snacks to keep in the car include:

  • fruit
  • nuts
  • protein bars
  • small bags of popcorn or pretzels
  • self stable chocolate milk

I have a little cooler that I bring with me, so my choices include more things:

  • Greek yogurt
  • string cheese
  • veggies and hummus

I take my food very seriously :)

For me, I need to eat small meals throughout the day. If I go too long without eating, I know that I will end up overeating. So, I try to prevent that before it even happens.

Since, I didn’t get home until late in the afternoon, lunch was a lot later than normal (luckily, I had the yogurt tube earlier). I made a green pepper stuffed with brown rice, sautéed spinach, and feta cheese.

I also had one frozen Thin Mint cookie. I’m proud of my portion control on that one :)

We’re supposed to get tons of snow tonight and tomorrow, so hopefully I’ll be able to make it to the gym in the morning. I am ready for spring weather!!

Baked Chicken and Cheese Chimichangas


Last night, I emailed Marlene and asked her for her recipe for chicken and cheese chimichangas so I could make them for dinner. She said that she uses this Pillsbury recipe. The recipe uses crescent rolls and is baked rather than fried.

The recipe was super easy to make, and I had Danny help me roll them up because he’s better at that kind of thing. I think this is a very versatile recipe – you could make them with chicken and cheese, or just cheese, or you could substitute the chicken for beef.


Today has been another one of those crazy days. Jaden was up a lot last night with ear pain. By the time I gave him Tylenol and got him settled down, I had a hard time falling back asleep. That meant I was very tired this morning. Luckily, my new coffee mug cheered me up.

Jaden was feeling better this morning, but I knew that he had an ear infection. He still went to school, and Danny called the doctor to get him an appointment. Our doctor’s office always keep the 11:15 am time slot open for emergencies. Since I knew he wouldn’t be getting into the doctor until later, I headed to the gym.

Today’s Workout

  • BodyPump – 60 minutes

I finally signed Danny and I up for the Fitness Fantasy League at the gym this morning. It starts in the beginning of January and surprisingly only one other team has signed up so far! The lady in charge asked me to spread the word. She wasn’t sure of people weren’t signing up because they didn’t really understand how it works or because you have to pay to sign up. It cost Danny and I $28 to sign up because we’re not residents but the grand prize is worth $500, so it’s worth it to me!

Also, I guess it’s going to follow the rules similar to real fantasy football. I have no clue how real fantasy football works. At all. The lady explained to me that they would keep tally of how many times each team worked out each week. The team that worked out the most each week would get one point for that week. So, you could earn a total of 8 points since the program runs for 8 weeks.

Then, she said something about tie breakers and counting each workout, but she pretty much lost me there. All I know is that we’re signed up and I’m excited. Now, we just have to come up with a team name. Any suggestions?

After the gym, I stopped at home, grabbed a quick pre-workout breakfast and then picked up Jaden from school.

Apparently, he feels right at home at the doctor:

It turns out that he does have an ear infection and his allergies were acting up pretty bad. The doctor said that he could stay from school today, but he cried to go back to school. I figure that in a few years he’ll be crying to stay home from school, so I let him go back. The school said that as long as he’s not contagious, he’s fine to go back.

After dropping Jaden back off at school, I ran to the pharmacy to fill his prescriptions, and I grabbed a Amy’s pizza for lunch. Easy, delicious, and quick. I also had some carrots and cucumbers with hummus to help get my veggies in for the day.

I’m going to try to talk Danny into fro-yo tonight because the new peppermint stick flavor just came out! I love peppermint! Have a great afternoon!

Putting Things in Water is Fun

Coffee is the best way to start the day.

I am such a huge coffee lover, but I limit myself to one cup in the morning, which is why the Keurig coffee maker is so wonderful.


I usually have breakfast about 45 minutes to an hour after I’ve had my coffee. Today, I had a Van’s blueberry waffle topped with peanut butter and fresh strawberries. I also had half of a honeycrisp apple on the side. I love these waffles, and speaking of Van’s waffles, look for some exciting Van’s news on my blog coming soon!

Today’s Workout

  • 3.18 miles treadmill (4:2 run/walk ratio)
  • 10 minutes stretching

After breakfast, I headed to the gym to run/walk on the treadmill for a bit. I brought my lemon+lime Nuun to throw in my water bottle for during my run. Actually Jaden put it in my water bottle. He gets so excited. I think it’s his favorite part of the day.

I completed 3.18 miles on the treadmill doing a 4:2 run/walk ratio. I usually walk really slow at the end for a minute or two.

Lately, my hamstrings have been really tight, so I made sure to stretch for a good 10 minutes after getting off the treadmill while finishing my Nuun.

I just noticed that my shoelaces match the Nuun bottle. I’m stylish like that.

After the gym, I took Jaden to the doctor because he has been complaining of ear pain. I knew we’d be gone awhile, so I packed a snack in my handy dandy cooler.

1/2 cup of Fiber One cereal and a Dannon strawberry Greek yogurt.

Apparently, Jaden thinks that he’s more attractive making faces than he is smiling.

It turns out that he does have a pretty bad ear infection in one ear and fluid build up in the other ear. So, off to the pharmacy we went to fill his antibiotic prescription. Luckily, he doesn’t have a fever or anything, so he’ll be fine to go to his preschool graduation tonight.

Fruit punch Mio! Trust me, he will be very excited. Jaden has been begging me to buy him Mio every time we go to the store, but I always so no. So, he will be very happy to get some. It’s funny, I know, but this kid loves putting things in water.

I also have my weigh-in tonight. Why does Thursday always come so fast. I am hoping for at least a one pound weight loss. I feel like I’m always hoping for at least a one pound weight loss. Only four more weeks to weigh-in!

My gym is actually starting a Biggest Loser Weight Loss contest at the end of June that I am thinking about joining. This one is way more in-depth. You meet for exercise classes, nutrition classes, monthly weigh-ins, and there’s an optional walk to run program with a 5k race at the end. The grand prize is a Biggest Loser arc trainer. The only thing is that it costs $245 to join! That’s some serious cash.
