Gluten Free Pizza Crust

Yesterday, I received my last Goodies box in the mail – for some reason, the company decided to cancel the service.

I was excited to see that there was two gluten-free items in the box. Perfect timing!

Of course, I had to use the pizza crust right away and made it for dinner last night. They were right – it is foolproof. You just add water and olive oil and mix it together.

I added sauce, red pepper, green pepper, red onion, broccoli, mozzarella and feta cheese. It was delicious.

Speaking of gluten-free foods, I am happy that Larabars are gluten-free, GMO free, dairy-free, soy-free, vegan, and kosher. They do have carbs and sugar, so I plan on eating them in moderation.

Today’s Workout

  • Hip, glute, and quad stretches
  • Bridges, one-legged bridges, and walking lunges
  • Ab exercises
  • Arc trainer – 20 minute

I went to the gym this morning and got about an hour-long workout done. Danny has the day off tomorrow so I look forward to going to the gym with him in the morning before going to Jaden’s Halloween party in the afternoon!

Roasted Veggie Salad

Roasted Veggie Salad

I have a salad for dinner most weeknights, and sometimes it can get a little boring. Last night, I made some roasted veggie and decided to top my salad with them.

I like roasted veggies and I like salad, so why not combine the two?

I found these pre-portioned bags of salad at Target used one for the base of my salad.

I like buying pre-portioned and pre-cut foods sometimes because it saves me a lot of time at dinner. And dinnertime is the craziest time of the day in my house.

I roasted Brussels sprouts, broccoli, carrots, and red onion with olive oil, balsamic vinegar, and a little bit of salt in the oven for about 25 minutes.

When they were done, I topped my lettuce with them and added slivered almonds and pear slices. I’m not sure why I added the pear, I just wanted a pear at that moment, and it worked well in the salad.

Since the roasted veggies were so flavorful, the salad didn’t need any dressing. I ate it with a peach Greek yogurt for some protein.

Today’s Workout

  • Practiced BodyPump at home – 60 minutes
  • Stretching, foam rolling, and tennis ball rolling

I woke up this morning and could feel a cold coming on, so I stayed home from the gym and practiced BodyPump at home again. Four days in a row without going to the gym?! What’s happening to me?!

I need to learn this BodyPump release so right now, staying home and practicing is what’s working for me.

After I practiced for about an hour, I did some stretching.

Lately, I have been using a tennis ball to roll my glute. I just sit right on the tennis ball and roll out the knot and tight spots. It hurts but it works great. Tennis balls also work great on your feet if you have plantar fasciitis.

Burning Calories

Yesterday’s Workout

  • BodyPump – 60 minutes

Yesterday’s BodyPump class was a big step for me because I actually let Danny come to the class that I was teaching. For some reason, I get nervous teaching in front of him, but I have been slowly becoming more comfortable teaching in front of a group (which is good because the class was large yesterday), and¬†wasn’t quite¬†as nervous teaching.

I¬†still only taught the squat, chest, and back tracks. According to my heart rate monitor I burned 533 calories during yesterday’s class. I burn a lot more calories taking the class and teaching than I do just taking the class.

I spent the rest of the day making this chili recipe for my family last night.

They came over to watch the Bears game and I thought chili would be perfect for the first day of fall dinner.

I didn’t workout this morning because I had a meeting at the gym, but I was thinking about taking a cardio barre class at the gym tonight. I have never taken a barre class and really want to try it out. A barre class is basically pilates, ballet, and yoga movements done at a ballet barre. I’ve heard it’s a great workout and tough on the calves!

Lunch

Lunch this afternoon was English muffin hummus melts with carrots and more hummus on the side.

I will spending the rest of the afternoon watching this DVD and filling in the workbook.

Date Night

Good morning! It is a beautiful morning here in Chicagoland! I took advantage of the nice weather this morning and ran outside for the first time since July!

Today’s Workout

  • 3.61 miles (ran 3.1 miles and walked .5 miles)

My last long run outside was in July and it was my hardest run and I was so disappointed in myself, not even knowing that I was injured. I feel a little better about that run now :)

It was a bit chilly this morning so I wore long sleeves. I realized about a minute into my run that was a mistake since I tend to heat up quickly.

I did a 5:1 run/walk ratio. I felt really good running and wanted to skip the walk breaks but I am really trying to take it slow and not reinjure myself so I made myself take the walk breaks. Even though they are only a minute long they helped me catch my breath and recharge.

I ran 3.1 miles and then finished up by walking half a mile. My hip feels slightly sore, so I am going to make sure to stretch.

When I got home, I finally broke into my pumpkin spice lattes.

The Vue cups are cool – it comes with one frother cup and a pumpkin spice coffee cup.

When I bought these, I didn’t realize that they were pre-sweetened so they have sugar and calories. They have a 100 calories per cup compared to my usual 35 calorie cup of coffee so I think I’ll save them for weekends.

It was delicious though!

Last night, Danny and I went to Maggiano’s for dinner.

It was so delicious and I ate soooo much. I am not usually a huge pasta fan but my pasta dish last night was fantastic! I ordered the lobster carbonara.

Spaghetti with snow peas, lobster, and garlic cream sauce.

Thanks to my mom for watching my kids…and for burning my table cloth. Just kidding. She was so upset that she accidently burned our $4 vinyl tablecloth with a hot popcorn bowl. This is why I buy cheap vinyl tablecloths…because the kids spill food all over them and my mom burns them :)

We were thinking about going to the arboretum today but then decided against it because¬†of Jaden’s allergies with all the trees. This is the worse time of year for him. Once about three years ago, we were driving to meet my family at a corn maze and Jaden was having these horrible breathing problems and was hospitalized for extreme respiratory failure about an hour from home.

He was there for two and a half days and it was scary. Poor Jaden needs to live in a bubble! We’re trying to think of something else fun to¬†do today!

Today’s Workout

  • BodyPump – 60 minutes

Today’s BodyPump¬†class was full¬†of a lot of new people. I taught¬†three tracks – squats, chest, and back. It’s a lot harder doing the moves and teaching than it is just taking the class. By the time I was done, I was exhausted.

I messed up once on the back track but luckily the instructor was there to get me back on track. At home, I can do it perfect without any notes but when I am in front of a group, I just get too nervous and need my notes to fall back on even though I know it. Oh well. Practice makes perfect.

My family is coming over on Sunday for dinner and to watch the Bears game so after the gym, I stopped at Target to get some stuff that I’m going to make for dinner. I couldn’t pass up this cute Halloween decoration!

Tonight, my mom is coming over to watch the kids so Danny and I can go out to dinner. We’re going to Maggiano’s and I can’t wait to eat!

Pool Running and My Fitness Pal

Good morning РHappy Monday!

My weekend:

Saturday

Saturday morning started out fairly normal Рwe walked around the Halloween store with my dad trying on costumes. Normal for us anyway.

Halloween is a big holiday in my family so be prepared to see lots of Halloween related posts in October. It’s always so much fun – we do Halloween games, have a Halloween food and pumpkin carving night, come up with creative Halloween costumes and keep them secret until the Halloween party at the end of the month.

I think I even have my Halloween costume figured out – I just might have to lose a pound or two :)

Pool Running

Saturday afternoon I went to the Deep Water Pool Run/Conditioning class at my gym. It’s held in the 12 feet section¬†on the pool and we wear water belts to help¬†us float.

I have mixed feeling on the pool running class, and I think I prefer my workouts¬†on land. First,¬†there wasn’t a lot of just running like I was hoping. We did a bunch of stuff – running, bicycle riding, skiing, straight leg kicks, etc. A lot of the moves just felt awkward to me in the water and I didn’t feel like I was doing some of them right.

Second, I was freezing in the water. The water wasn’t super cold but I just couldn’t seem to get warm. Then, halfway through the class I started to get nauseous. I’m not sure if it was¬†being in the water or if I just felt sick, but I didn’t feel good. Then,¬†I got a terrible foot cramp and¬†had¬†to take a break to stretch it on the wall.

I was pretty much a mess the whole class and¬†was glad when¬†it was over. The class¬†wasn’t bad and the instructor was good, I just don’t think I enjoyed it. I was¬†looking more for just pool running so that I could still run without having hip pain.

Saturday night, we took the kids to Claim Jumper for dinner. This was only our second time there and I thought it was really good.

I had the fish tacos, and they were delicious but they had a little too much cabbage on them. I had to take a lot of it off. Danny had meatloaf and I think I ate half of his biscuit because it was so good.

Sunday

Sunday morning I stopped at Dunkin Donuts for a white chocolate pumpkin coffee. So good.

We spent the afternoon at my dad’s house watching the Bears game.

Today’s Workout

  • Practiced squat track for BodyPump – approx. 15 minutes
  • Treadmill – 2.05 miles (4:2 ratio) – 27 minutes
  • Stretching, bridges, foam rolling – approx. 20 minutes

I ran again today! I am still trying to take it slow, but I went about 6 minutes longer today. I am still walking for two minutes and running for four minutes. I finished with a minute of slow walking.

I made sure to stretch and foam roll after.

So, I finally jumped on the bandwagon and downloaded the My Fitness Pal app. I’ve only had it for 12 hours and I already love it!

I used to measure all my food and count my calories in a notebook. You can read more about my weight loss story here. I lost weight and stopped counting calories although I was a lot more aware and mindful of what I ate.

I probably gained a few pounds back which I am trying to lose, so I got the My Fitness Pal app. It is so easy and fast to use. All you have to do is use your phone to scan the barcode of your food, and it pulls all the numbers up for you. It’s awesome.

It was easy for breakfast – I just scanned my cereal, milk, coffee, and creamer bar code and I was done. I’m sure it’ll be a little harder f I make a salad and have to figure each ingredient but it’s still faster than writing it out. And you can enter all your exercise in as well. We’ll see how it goes!

Last Night’s Dinner

Dinner time is usually hectic at our house because I am trying to cook, the kids are running around, and my sister-in-law is picking up my niece, so I usually try to cook dinners that are quick and easy. Last night I made tacos. I made crock pot chicken tacos for the boys and fish tacos for myself.

Sometimes cooking two meals is time consuming but we all eat such different things (I’m usually making a separate meal for myself). Danny and Jacob are big meat eaters, I eat fish and lots of veggies, and Jaden pretty much doesn’t eat anything at all. I know a lot of people simply make one meal and if you don’t like it then you don’t eat, but since I am usually the one with a different meal, I don’t mind cooking two meals.

Whenever I can find a shortcut to cooking, I usually take it which is why my fish tacos were so easy and incredibly delicious yesterday.

I bought Mahi Mahi taco mix from the Whole Foods fish counter.

It has everything in it – Mahi Mahi fish, seasoning, onions, and bell peppers. I just cooked it on the stove for a few minutes. Then, I warmed up two corn tortillas on the stove and put the taco mix in them. I topped the tacos with Whole Foods mango salsa and dinner was served.

The fish tacos were amazing and when they were gone, I wish I had more!

Yes, I could have made the fish and salsa myself but I honestly don’t have the time or patience for that.

Today

I decided not to go to the gym this morning. Instead, I stayed home and went over the new BodyPump release. I set up a little space in my living room.

Since, I don’t have a bench at home, I set pillows on our coffee table and lay on it. Hey, you have to work with what you got.

I also use Jacob’s bow from karate when I need a break from the weight. I have been doing the chest track so many times in a row that my shoulder is starting to kill me. I have been making sure to ice it. I always have some kind of soreness somewhere.

If the weather isn’t too hot today,¬†I might try to go for a walk later. I haven’t been on¬†a walk in forever! Have a great afternoon!

Weekend Fun

Good Morning!

First off, a big congrats to all the ladies who ran the Zooma Half Marathon on Saturday. The Zooma Half Marathon Athletes trained very hard to be able to accomplish their goal of running their first half marathon. I am sad that I missed out on such an awesome experience but I’m glad everyone else did great! And a big thank you to the organizers and ambassadors who showed everyone so much support.

Friday

I might not have run the half marathon, but I sure carb loaded like I did.

I have been doing really good with my eating during the week. The weekend – not so much. Weekends are always my downfall, but I’m really trying hard to work on it because I feel like¬†I’m undoing all the hard work I put in during the week.

Danny and I had a date night on Friday night. We went to a nearby restaurant called The Lucky Monk.

I wore a maxi dress that I recently got at JCPenney. I usually feel like maxi dresses don’t look right on me, but I love this one.

The Lucky Monk got really good reviews online and I was excited to try it out. We started with the warm pretzel trio.

The tomato-parmesan dipping sauce was amazing.

I debated between ordering the fresh tossed spinach pizza and the crispy fish tacos. I asked the waiter and he recommended the fish taco.

Fries and rice. Don’t judge.

Unfortunately, the fish tacos were extremely spicy. My mouth was on fire. They were good, I just don’t enjoy spicy foods. Next time, I will definitely order the pizza.

I don’t even want to tell you what Danny ordered. Okay, okay. He got a grilled cheese burger – a burger between two bacon-stuffed grilled cheese sandwiches.

That is crazy. Thank goodness we don’t eat like this all the time. Danny said the heart attack on a plate burger was good, but he wouldn’t order it again. Overall, The Lucky Monk was a really good restaurant and our waiter was very knowledgeable about the menu and very friendly.

We thought about seeing World War Z, but it started at 9:45 pm, and I knew there was no way that I would stay awake until the end of the movie. I’m like 31 going on 80.

Saturday

On Saturday, we took the kids to a touch-a-truck and kid’s day event. There were police cars, fire trucks, buses, and construction vehicles for the kids to climb and play on.

There was also a petting zoo that Jaden and I went into. Let me tell you, those goats are aggressive! One goat would chase people around and just grab all the food out of their hands. He scared me.

Jaden loved it. He tried sitting on the ground and holding the baby goats like puppies. It didn’t work. I finally dragged Jaden out of the petting zoo before the goats started really attacking and he insisted on waiting in line to get his hair “done.”

And by done, I mean in a Mohawk and sprayed red…with glitter.

He’s awesome.

Later this afternoon, we’re going to a family picnic with Danny’s family. Have a great Sunday!

Grilled Broccoli Recipe

Last night, taking advantage of the beautiful weather, we cooked out on the grill. I made grilled broccoli. I love broccoli, but I especially love it grilled.

Grilled Broccoli

Ingredients:

  • Approx. 3 cups of raw broccoli
  • 1 1/2 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 2 tsp. garlic
  • 2 tsp. parmesan cheese
  • salt and pepper to taste

I just used a aluminum cake baking pan to grill the broccoli in.

Jaden’s favorite part was juicing the lemon.

Directions:

  1. Put broccoli in pan and add olive oil, lemon juice, garlic, salt, and pepper. Gently toss to coat.
  2. Top with parmesan cheese.
  3. Grill over medium heat approx. 10-15 minutes or until broccoli is done.

So easy and so delicious!

Along with the broccoli, I had salmon belle mar and grilled corn on the cob. The perfect summer dinner.

Danny and I have dinner plans tonight, then we might see a movie. Any good movies out?

Good News/Bad News

Good News: I do not have a stress fracture in my hip!

Bad News: I do have hip bursitis and ligament irritation (whatever that means).

Good News: I think I’m okay to run the half marathon in August.

Bad News: I am not even close to ready to run this half marathon. Not at all. I haven’t ran at all in over a week. My longest run in¬†two and a half¬†weeks has been 5 miles and my longest run before that was a¬† random 8 miles.

The sports doctor called on Friday and left me a voicemail. She said that my MRI results didn’t show a stress fracture but did show some ligament irritation, but I was fine to exercise. However, she didn’t specify what I could actually do. Can I run? Can I only walk? Can I take BodyPump and do 200 squats?

Right now, my hip still hurts and I am afraid to do anything to make the pain worse. What it I workout and¬†I tear the ligament? Then I’ll be in even worse shape. So right now I am still taking it a little easy until I talk to her. I might try a walk later today and I’m going call and schedule physical therapy tomorrow.

I am so nervous about the half marathon. How can I run it with almost no training?! Yesterday was supposed to be my last long run of 10-12 miles followed by a week of tapering and then the half marathon. Instead, I haven’t ran at all. I think there will be a lot of walking going on – I cannot get injured worse right now.

And honestly, my health and not being injured is way more important to me than crossing that finish line. But at the same time, this is one of the big things that I want to accomplish in life. Running has always been a struggle for me and this would be the ultimate goal. We shall see!!

Good News: Danny and Jacob got home yesterday after being gone for a week fishing in Canada!

Bad News: There’s a lot of laundry to do.

Danny and Jacob went fishing with my grandpa, dad, and brother all last week. So, it was just me, Jaden, and my niece. It was a loooonnnngg week. Sometimes, when you’re apart from your significant other, it makes you appreciate them more.

Danny and I have a pretty good system worked out of what we both do around the house that works perfect for us. We both contribute in our own ways. Then when one person is gone, and you take on the work of two people, you appreciate that other person more.

But they’re home now!! And I’m happy.

Jacob loved fishing but he hated touching the fish. I love this picture of him and my grandpa.

Good News: In celebration of their return, I made three cheese stuffed shells and garlic bread for dinner last night.

Bad News: I ate a lot of it. Especially the garlic bread. Yum!
