Baked Chicken and Cheese Chimichangas

Yesterday

Last night, I emailed Marlene and asked her for her recipe for chicken and cheese chimichangas so I could make them for dinner. She said that she uses this Pillsbury recipe. The recipe uses crescent rolls and is baked rather than fried.

The recipe was super easy to make, and I had Danny help me roll them up because he’s better at that kind of thing. I think this is a very versatile recipe – you could make them with chicken and cheese, or just cheese, or you could substitute the chicken for beef.

Today

Today has been another one of those crazy days. Jaden was up a lot last night with ear pain. By the time I gave him Tylenol and got him settled down, I had a hard time falling back asleep. That meant I was very tired this morning. Luckily, my new coffee mug cheered me up.

Jaden was feeling better this morning, but I knew that he had an ear infection. He still went to school, and Danny called the doctor to get him an appointment. Our doctor’s office always keep the 11:15 am time slot open for emergencies. Since I knew he wouldn’t be getting into the doctor until later, I headed to the gym.

Today’s Workout

  • BodyPump – 60 minutes

I finally signed Danny and I up for the Fitness Fantasy League at the gym this morning. It starts in the beginning of January and surprisingly only one other team has signed up so far! The lady in charge asked me to spread the word. She wasn’t sure of people weren’t signing up because they didn’t really understand how it works or because you have to pay to sign up. It cost Danny and I $28 to sign up because we’re not residents but the grand prize is worth $500, so it’s worth it to me!

Also, I guess it’s going to follow the rules similar to real fantasy football. I have no clue how real fantasy football works. At all. The lady explained to me that they would keep tally of how many times each team worked out each week. The team that worked out the most each week would get one point for that week. So, you could earn a total of 8 points since the program runs for 8 weeks.

Then, she said something about tie breakers and counting each workout, but she pretty much lost me there. All I know is that we’re signed up and I’m excited. Now, we just have to come up with a team name. Any suggestions?

After the gym, I stopped at home, grabbed a quick pre-workout breakfast and then picked up Jaden from school.

Apparently, he feels right at home at the doctor:

It turns out that he does have an ear infection and his allergies were acting up pretty bad. The doctor said that he could stay from school today, but he cried to go back to school. I figure that in a few years he’ll be crying to stay home from school, so I let him go back. The school said that as long as he’s not contagious, he’s fine to go back.

After dropping Jaden back off at school, I ran to the pharmacy to fill his prescriptions, and I grabbed a Amy’s pizza for lunch. Easy, delicious, and quick. I also had some carrots and cucumbers with hummus to help get my veggies in for the day.

I’m going to try to talk Danny into fro-yo tonight because the new peppermint stick flavor just came out! I love peppermint! Have a great afternoon!

Zombie Pandas are Cute

I just have to share a few of the things that I picked up at Target yesterday. I went to check out their Halloween clearance section, and it was all 50% off including the food and snacks. I picked up 24 individual bags of Angie’s kettle corn for only $4.

I also got a box of 18 kid’s Clif Z bars for only $4!

These snacks are great for lunches or for a fast snack on the go. And they don’t expire anytime soon. I love holiday clearance.

When I was at Target, I also picked up these cinnamon and sugar Pringles because I was intrigued by them.

I love cinnamon and sugar pita chips, so I figured the Pringles would be fun for the kids to try. They also had white chocolate peppermint Pringles, which I did not but, but wouldn’t opposed to trying them.

I am a sucker for seasonal themed food and drinks.

After Target, I went to pick up my niece and she was busy enjoying her Halloween candy.

Last Night’s Workout

  • Walked 2.01 miles – treadmill (Yes, I count the .01 of a mile)

Breakfast

Even though it’s cold here, I have been craving overnight oats (they seem more like a “summer food” to me), so last night I mixed up some oats, berry Greek yogurt, and almond milk. Easy peasy. I let them sit in the fridge overnight and this morning, I added some fresh blueberries.

Today’s Workout

  • 1 mile – treadmill
  • BodyPump – 60 minutes

Pile on the Miles Total: 4.61 miles

After the gym, I had to stop at the store to pick up some allergy medication prescriptions for Danny and Jaden. While I was there, I bought this clearance Halloween zombie panda bear t-shirt for myself.

Just because I’m 30 doesn’t mean that I can’t wear a zombie panda bear shirt. Okay, okay, I got it to sleep in. I like to sleep in big t-shirts, but not men’s t-shirts because they’re too big, so I usually buy women’s t-shirts in large to sleep in.

Plus, how can you pass up a zombie panda bear t-shirt for $2?!

Lunch

I was really hungry when I got home today, so I wanted to make something fast and easy for lunch. I found this Amy’s Light and Lean pasta meal in my freezer and made that. Only 270 calories and 11 grams of protein. Not bad for a frozen meal.

I was really good and didn’t have any Halloween candy yesterday, but today I splurged and had a few pieces. Which isn’t a big deal, but sometimes I find that when I start eating it, I have a hard time stopping so it’s better just to avoid it all together!

I Like Things That Make my Life Easier

Today’s Workout

  • BodyPump

My glutes sure were sore for BodyPump this morning after yesterday’s Butts & Guts class, but I managed to get through it. After my workout, I had an Odwalla chocolate milk.

Milk, no make-up, and crazy hair. Just a normal day in Heather’s life. In the car.

Lunch

I picked up these Ziploc steam bags at Meijer today, and I don’t know why I didn’t buy them sooner. They’re awesome.

I used one to make steamed broccoli for lunch today. It’s so much easier than steaming it on the stove.

All you do is put whatever you want to steam into the bag, add a little water & seasoning, and microwave according to directions which are printed right on the bag.

My broccoli only took 90 seconds to steam and it was perfect. I also had an Amy’s frozen Light & Lean penne meal. It was really good and sometimes you just need something quick to make.

On tonight’s agenda is karate and then yoga later!
