Cardio Fusion Class

Good afternoon!

Last Night’s Workout

  • BodyPump – 60 minutes

I didn’t workout yesterday morning, so I decided to take the evening BodyPump class instead. It’s always so different taking a class at night. In the mornings, we know each other and have certain ways of doing things whereas at night, they have their own group and way of doing things.

It’s nice to go workout in the evening once in awhile but I prefer the mornings.

Breakfast

Breakfast this morning was the gluten free Puffins cereal.

It was good, but the peanut butter puffins are way better.

Today’s Workout

  • Cardio Fusion Class – 60 minutes

Since I went to BodyPump last night, I decided to try out a new class at the gym this morning – Cardio Fusion. The first 30 minutes of the class were pretty much Zumba, then we did about 20 minutes of abs, and about 5 minutes of kickboxing moves.

It was a really fun class that I would take again.

Post workout, I had a Pure Protein shake.

Lunch

By the time lunch rolled around today, I was hungry. I made an egg and cheese sandwich on Udi’s bread.

I also had a coconut pineapple sparkling water. Normally, I am not a fan of coconut, but this sparkling water flavor is the best one I’ve tried!

My brother, sister-in-law, and niece come home from Florida tonight! I invited everyone over to dinner at our house tomorrow night, so we can visit and hear all about their trip and half marathon. Okay, okay. I really invited them over so I could squeeze and hug my niece and ask her how much she missed me!

Mother/Son Run

Good morning!

Good luck to my sister-in-law, Crystal, who is running her first half marathon in Florida tonight! She will turn 30 years old  at the stroke of midnight while running – a very Disney Cinderella moment :)

Yesterday’s Workout

  • Ran 1 mile – Treadmill
  • BodyPump – 60 minutes

I am slowly getting in my miles for Pile on The Miles! I ran one mile before BodyPump yesterday and I burned over 600 calories!

Today’s Workout

  • 3 miles – outside

This morning, Jacob and I ran together for the first time outside.

His first 5k is coming up on Thanksgiving and he is used to running on the treadmill so I wanted him to run outside a few times before the 5k. I think he realized today what a big difference it is running outside vs. the treadmill. And it didn’t help that today was really really windy.

We started out running for awhile and walking when Jacob needed to. For the last mile, we ran two minutes and walked one minute. The wind made running so hard, but we finished three miles in about 35 minutes.

Hopefully, we can run outside a couple of more times before the 5k!

After running, we stopped at McDonald’s for mother/son coffee and chocolate milk.

Breakfast

For breakfast, I made an egg and cheese sandwich on Udi’s gluten-free bread.

I really like the gluten-free bread – it’s even better that regular bread and I plan on continuing to purchase it. It’s expensive but it comes frozen so it’ll last a long time.

The breakfast sandwich was so good and even better than my beloved bagelwich.

This afternoon, we’re going to my dad’s for lunch and maybe seeing a movie.

Tabata Xpress Class

Good afternoon!

Breakfast

I ran out of the almond flour pumpkin pecan pancakes that I made last week – I freeze them and warm them up in the microwave. Since, I had a little bit of almond flour left, I decided to try out the almond flour pancakes recipe from Matt at Runner Savvy.

Just as he said – they were really good pancakes! I only had about a cup of almond flour left, so I had to adjust the measurements accordingly. I topped mine with a little bit of peanut butter for the perfect breakfast.

I drank  my coffee out of my cute gingerbread coffee mug. It’s never to early to drink out of a holiday mug :)

After breakfast, I headed to the gym.

Today’s Workout

  • Stretching, hip bridges, and band walking squats – 20 minutes
  • Walked on treadmill – 10 minutes
  • Tabata Xpress Class – 30 minutes

I took a new class at the gym this morning – Tabata Xpress. If you have never heard of tabata before, it’s a fast but effective and efficient workout. Some Tabata workouts can be as short as four minute long because you’re doing such high intensity exercises. It gets your heart pumping!

Tabata is basically like interval training – you are working hard for a set amount of time followed by a short recovery. The Tabata class I took today consisted of doing a high intensity exercise for 30-60 seconds followed by a short rest time.

By the time 30 minutes are up, you’re ready to be done! In today’s 30 minute class, I burned 300 calories.

I’m going to try and get in a little bit of BodyPump practice this afternoon!

Gluten Free Pumpkin Muffins

Jaden was so excited about Halloween this morning. He wore his costume to a party over the weekend and can’t wait to wear it again tonight.

My other son, Jacob, really wanted me to tell you guys that he ran 3.25 miles in about 27 minutes. He has been really getting into running lately, and I’m looking into a 5k for him to run. He’s really excited about getting his own bib to wear :)

Breakfast

Breakfast this morning was a gluten-free pumpkin muffin that I made yesterday afternoon and egg whites.

Gluten Free Pumpkin Muffins – makes approx. 8 muffins

Ingredients:

  • 1 cup almond flour
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/2 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • handful crushed pecans – optional
  • 1/2 cup chocolate chips – optional
  • 1 cup canned pumpkin
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 tbsp. almond butter
  • 2 tbsp. honey
  • Pecans and pumpkin seeds to top muffins – optional

Directions:

  1. Preheat oven to 350 degrees and line muffin tin with liners.
  2. Mix dry ingredients in a medium bowl – almond flour, baking soda, sea salt, pumpkin pie spice, cinnamon, nutmeg, and pecans.
  3. In a large bowl, whisk together wet ingredients - pumpkin, eggs, vanilla, almond butter, and honey. Whisk until combined.
  4. Slowly whisk dry ingredients into wet ingredients. Stir in chocolate chips.
  5. Pour batter into muffins liners and top with pecans and pumpkin seeds. 040
  6. Bake at 350 degrees for approx. 20-25 minutes.

These were so delicious! I ate one when they were done and consumed it in about 30 seconds! :)

Gluten Free Pecan Pumpkin Pancakes

Yesterday, I started the 28-day Grain Brain Challenge. Basically, it’s gluten-free, lower carb diet, low sugar eating. I say lower carb because I am definitely eating a lot less carbs than I used too, but I wouldn’t exactly call it low-carb. Just lower carb :)

I went to Whole Foods and the regular grocery store over the weekend to pick up some food items. I was excited because I found a recipe for gluten-free pumpkin muffins and gluten-free pancakes using almond flour/meal.

I didn’t buy the almond flour at Whole Foods because it was so expensive and I’ve seen it at our local grocery store for less. So, I stopped at the grocery store to pick it up and it was sold out. Oh, well. So, I went to another grocery store and they didn’t even carry it.

Yesterday morning, I went to Target to get almond flour, and they were also sold out. I  was just getting aggregated by this point. Three stores and no almond flour?!

I finally found almond flour at a different Target last night. I used it in a pancake recipe this morning.

Some of the things I picked up at the store:

  • Udi’s gluten-free bread
  • chunky peanut butter
  • pumpkin seeds
  • almond and pecans
  • flaxseed
  • canned pumpkin
  • romaine lettuce
  • baby greens
  • celery
  • green pepper
  • cucumber
  • broccoli
  • zucchini
  • gluten-free pizza sauce
  • mozzarella cheese
  • Muenster cheese
  • eggs
  • baking powder and baking soda
  • organic olive oil cooking spray
  • flakers – flax seed “crackers”

Yesterday wasn’t too hard – my meals seem smaller, so I think I am going to have to eat more smaller meals or bigger snacks so that I don’t get hungry.

I had one piece of Udi’s gluten-free bread for breakfast with peanut butter and egg whites. I have never had gluten-free bread before so I wasn’t sure what to expect but it was delicious! I could see myself eating this on a normal basis…I just wish it wasn’t so expensive.

The first bite I tried wasn’t too bad. I poured some out onto a plate with some sliced cheese and tried to eat them. I couldn’t. I can’t even describe the taste, but it was bad. Sorry flackers. I had to throw my plate away. But this point I was pretty hungry and needed something quick to eat, so I grabbed celery sticks with chunky peanut butter.

I think I am going to have to get some more food because I was a little hungry yesterday.

Breakfast

Since I was able to find the almond flour yesterday, I made almond flour pecan pumpkin pancakes this morning for breakfast.

Gluten-Free Almond Flour Pecan Pumpkin Pancakes – Makes approx. 6-8 small/medium pancakes

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 2 tbsp. crushed pecans
  • 3 eggs
  • 1/2 cup canned pumpkin
  • 1/4 cup almond milk

Directions:

  1. Mix together almond flour, salt, baking soda, cinnamon, pumpkin pie spice, and pecans in a medium bowl.
  2. In a separate small bowl, whisk together the eggs, pumpkin, and almond milk.
  3. Slowly whisk dry ingredients into wet ingredients.
  4. Pour batter on a hot skillet and cook 1-2 minutes per side.
  5. Add your favorite topping – peanut butter, maple syrup, fresh fruit – and enjoy!

This was my first time having almond flour and while I found the texture to be a bit different than regular pancakes, I still thought they were good. I topped mine with peanut butter but I think they’d be much better with maple syrup!

  • Butts and Guts Class – 60 minutes

I debated going to Butts and Guts this morning because of my hip/quad pain but I really miss that class, so I went and just took it a little easier than normal. According to my heart rate monitor, I still burned 522 calories. Not bad!

Working Out, Eating, and Pumpkin Crafts

Today’s Workout

  • Total body strength training
  • Stretching
  • Practiced warm-up and back tracks from BodyPump

I feel like I got a really good workout in at the gym this morning. I have been practicing BodyPump so much lately that it was nice to do something different.

I did some strength exercises and incorporated some plyometric exercises. Some of the exercises I did included:

  • single leg bridges
  • sit-ups
  • walking lunges with a torso rotation
  • squat jumps
  • biceps curls
  • triceps extensions
  • jump roping
  • push-ups on the bosu ball

I finished up by practicing two BodyPump tracks and did a little bit of stretching. I was nice and sweaty by the time I was done, and that’s always makes me feel like I got a good workout in!

I wore my new workout jacket that I got JCPenney to the gym this morning.

I saw this jacket a few weeks ago and feel in love with it…but it was $60. I thought that was a little too much for a lightweight jacket for the gym, so I passed. But when I went to JCPenney a few days ago, it was on sale for $26.99 so I knew it was meant to be mine :)

It’s the Xersion Hooded Moto Jacket and I love how it zips to the side.

Grain Brain Challenge

I have been looking for some foods and recipes for the grain brain challenge. The good thing is that there are gluten-free and low-carb recipes everywhere – other blogs, Paleo websites, Pinterest. Whole Foods even has a 27 page list of all the gluten free items in the store.

I don’t think I’ll have a problem finding food to eat, I just need to find things that are fast and easy to make. I don’t mind cooking but I don’t want a recipe with 47 ingredients that requires me to spend tons of time in the kitchen.

I’ve had a few ideas so far:

  • Cucumber sandwiches – hollow out the cucumber and add cheese, veggies, and toppings
  • salmon and veggies
  • veggie omelets PicMonkey Collage
  • taco salads, minus the tortilla shell
  • gluten-free muffins
  • eggs in a pepper
  • spaghetti squash with veggies and marinara sauce

I am going to try to stick the eating as well as I can but gluten-free is all new to me, so I might not eat perfect.

Breakfast

I’m trying to eat up all my cereal and oatmeal in the house, so for breakfast today I had some peanut butter Puffins. I just discovered these and I already have to give them up!

One 3/4 cup serving just doesn’t cut it, so I had about a serving and a half with almond milk. I usually eat a small breakfast because I workout out in the morning and can’t eat a lot right before I workout. I always have a snack right after I workout. So, I look at it like I am splitting my breakfast up into two mini breakfasts.

Pumpkin Art Fun

I just had to share this cute pumpkin craft that I made with Jaden and my niece.

I saved two coffee creamers bottles and washed them out. Then, we colored the cap green for the stem, added orange paint and shook it around, and glued on a pumpkin face!

Easy, cute, and the kids loved making them!

Current 5k Playlist

Good afternoon!

Can you believe that today is the last day of September?! I can’t believe how fast the year is flying by! I think that October 1st might be one of my favorite days of the year. To me, it’s the day that kicks off the holiday season.

It’s October, which means that it’s the month of Halloween fun (my family does a lot of Halloween related activities), then Thanksgiving isn’t too far away, and finally it’s the Christmas season! I absolutely love this time of year.

Yesterday

Yesterday morning, we stopped for a quick last-minute breakfast at Panera. I had my heart set on a pumpkin bagel, but then I saw their new steel cut oatmeal with apple chips and toasted pecans and my dreams of a pumpkin bagel went out the window.

A little blurry but at least it tasted delicious :)

The oatmeal was definitely a good choice. But I will have that pumpkin bagel one day.

Today’s Workout

  • Stretching – 10 minutes
  • BodyPump – 60 minutes

I plan on running Tuesday, Thursday, and Sunday (5k) of this week but my quad is killing me today. I am going to see how it is in the morning and then will decide if I should run or not. I don’t want to push it before the 5k but I also want to stay on my running schedule.  I guess my other option would be to run Wednesday and Thursday. We’ll see how my quad and hip feel.

After BodyPump, I had a caramel fudge thinkThin bar.

I like caramel but I don’t love it. The bar was good, but I still prefer the peanut butter flavor.

Lunch

Lunch this afternoon was a bagel thin with egg whites and provolone cheese, carrots and hummus, and pineapple.

5k Playlist

I have been working on playlist for the 5k on Sunday. I am the kind of person that can run with or without music. It doesn’t really bother me to run without music but I do notice that I tend to run a bit faster when I am listening to music.

I hate wearing an armband though so I just use Danny’s old iPod shuffle and clip it to my waistband. Even then, I sometimes end up ripping it off and carrying it in my hand by the end of the race.

Cardio Barre Class

Things I learned from Cardio Barre class:

  1. I am not a ballerina.
  2. I will never be a ballerina.
  3. I secretly wish I could be a ballerina.

Last night, I took a cardio barre class at my gym. We did a lot of ballet moves at the barre, followed by some ab work, and a cool down. While I liked the class, I am definitely not a graceful person and don’t know any ballet positions.

And when we had to put our leg up on the bar, I had to heave mine up there. Maybe I need to work on my flexibility.

Also, it was a lot of work on my calves. I diagnosed with compartment syndrome a while ago, so my calves are already tight and I knew they’d be sore today.

I love trying new classes, but I really just love my old schedule of BodyPump, Butts and Guts class, and running.

Breakfast

Breakfast this morning was more pumpkin chocolate chip pancakes.

Today, I ate them without syrup and added one egg white to the mix which I think made them a lot fluffier.

Today’s Workout

  • 2.75 miles, treadmill
  • Stretching and foam rolling – approx. 25 minutes

Going to the gym:

Today’s workout on the treadmill consisted of running fast for one minute followed by two minutes recovery. I repeated this about 6 times for a total for 2.75 miles. I finished up with some stretching because my hip is starting to bother me.

I spent almost equal amounts of time in the fat burning zone and in the fitness zone during today’s workout.

I’m trying to work on spending more time in the fitness zone to torch those calories!

These are a little higher in calories (with lots of protein!) but my breakfast is usually smaller and not too high in calories, so I look at it like I am breaking my breakfast up into two separate mini meals.

I’m going to try and spend some of the afternoon going over the BodyPump tracks, but my body is tired!

Pumpkin Recipes

It’s the official first day of fall!

Oddly enough, I read that fall actually starts at 4:44 pm. I never realized that there was an exact moment in time that the seasons started. So at 4:43 pm, you can kiss summer good-bye! As much as I love summer, fall is still my favorite season.

I thought for the first day of fall, I would share a few of my favorite pumpkin/fall recipes from the past couple of years.

Chocolate Chip Pumpkin Pancake Breakfast

It might not technically be fall yet, but I am still pretending like it is, so I made pumpkin pancakes for breakfast. I think I shared this recipe last year, but I figured I’d share it again. :)

Chocolate Chip Pumpkin Pancakes    Serves: 1

Makes two small pancakes or one big pancake.

Ingredients:

  • 1/3 cup pancake mix (I used Whole Foods Whole Wheat Pancake Mix)
  • 1/4 cup pumpkin
  • 1/2 tbsp. chocolate chips (approx. 16 chocolate chips)
  • 1/3 cup water (depending on desired thickness – add more water for thinner pancakes)
  • Optional: syrup

I used to use sugar-free syrup for these pancakes, but I am trying to stay away from fake sugar so today I used pure maple syrup. I only used 1 tsp. which is about 17 calories. I am not a huge syrup fan so a tiny bit satisfies me.

Directions:

  1. Add pancake mix, pumpkin, chocolate chips, and water to a small bowl. Whisk just until combined.
  2. Cook on a hot griddle (or pan) 2-3 minutes per side.
  3. Top with syrup or your choice of topping and enjoy!

The pancake mix usually calls for oil and an optional egg but I use the pumpkin in place of those ingredients.

I think I might trying adding peanut butter to these pancakes or topping them with almond butter instead of syrup. Yum!

Today’s Workout

  • Walking - 10 minutes
  • BodyPump – 60 minutes

I started out at the gym this morning with a quick ten minute walk on the treadmill. Then, I took a BodyPump class and it was hard today! I am trying to get back to my normal weights and it was a great workout today!

I have been wearing my heart rate monitor for the past few days and I burned 445 calories in BodyPump today.

Post workout, I had a chocolate milk and of course, I am already over my sugar limit for the day - 22 grams of sugar in organic chocolate milk, plus the one tiny teaspoon of maple syrup this morning already has my sugar grams adding up!

Yesterday’s Lunch

I have to share yesterday’s lunch because it was so good – an egg and potato bowl.

I used to make this for lunch quite often but I haven’t lately so it was a nice change. I cooked one potato on the stove with garlic, red pepper, onion, and a little bit of salt and pepper. Then I scrambled three egg whites and topped them with some cheddar cheese.

I put all of it in a bowl for the perfect lunch!
