I can’t believe that it’s August 1st already. The summer is just flying by – it doesn’t help that I’ve spent most of the last three weeks stuck in the house.
August also means that school is starting this month! And back-to-school means back to packing lunches. When Jacob first started elementary school, he got hot lunch at school. I just figured it would be easier and a time saver for me. However, on the first day of both kindergarten and 1st grade, Jacob was given a peanut butter and jelly sandwich that he was told to eat. Jacob is allergic to peanut butter.
Oh, you better believe the school and I had some words about that. Luckily, Jacob’s allergy to peanut butter is very slight and not life threatening, but after that I decided it would be more beneficial to my children to bring a packed lunch from home. That way, I could pack them healthy options and food that I know they’d actually eat.
And to be honest, Danny has taken over packing the kids lunches. 🙂 I have such a wonderful husband.
I was recently asked to try out the Chiquita apple bites and I knew they would be a perfect option to put in my kid’s lunch. They are easy, portable, and healthy. They are great for children and adults!
I received two large bags of apple slices, individual apple and grape packages, and caramel apple packages. I probably don’t have to tell you that they kids loved the caramel apples the best.
These packaged apples came at the perfect time – right after my surgery. Since I wasn’t able to move around too much after my surgery, the kids were kind of on the own making lunch. Luckily, these apples are perfect to just grab from the fridge and eat. At least I knew they were having one healthy option with their pizza rolls. 🙂
The Chiquita website has tons of great recipes for using the apple bites. One of their recipes is for apple peanut butter toast but I decided to take it a step further and make apple peanut butter French toast! Yum! I made this recipe for myself, but Chiquita has lots of other recipes that are peanut free.
First, I took some of the apple slices and sliced them a little bit thinner. Then I whisked together one egg, a splash of almond milk, and a few dashes of cinnamon.
I used two pieces of Ezekiel bread and spread a thin layer of peanut butter on each side. Make sure to put peanut butter on both slices so the apples will stick. Then I added the apple slices to one side of the bread and topped it with the other piece.
I soaked it in the egg mixture and cooked it over medium heat until both sides were golden brown.
I ate it with some syrup and more apple slices because who doesn’t love apples?!
Chiquita Apple Bites only have 30-80 calories per serving, are washed and ready to eat, contain half a cup of fruit per serving, and are a great source of nutrition!
