Danny and I are trying to eat out less on the weekends since we’re trying to eat healthier. We usually eat out a couple of time on the weekend, but this weekend we did really good and didn’t eat out at all. Not only is it healthier, it also saves money! 🙂
Friday night, I made a pasta dish using some Nate’s meatless meatballs that I received to try.
Nate’s meatless meatballs come in three flavors – classic, zesty Italian, and savory mushroom. I used the classic flavor. They are so easy to make because they are fully cooked and you just have to pop them in the oven for ten minutes. You can also cook them on the stove in sauce.
I made Smart Taste pasta, added broccoli to the cooking water for the last two minutes, and then topped the pasta with the meatballs and sauce.
I do have a little secret…I didn’t tell Danny or the kids that they were meatless. I wanted to see what they thought of the meatballs from a meat-eater’s standpoint.
The kids were so-so on them but they feel that way about everything they eat. I’m pretty sure Jaden could live on pancakes and macaroni and cheese alone.
Danny was the real test since he is a big meat lover. And guess what? He loved them! The have the same taste and texture as regular meatballs and you don’t even miss that you’re not actually eating meat!

On Saturday Jaden had a baseball game in the morning. He has to be at his games a half hour before they start so Danny usually takes him and Jacob and I meet them there. Yesterday, at the last minutes, Jacob and I decided to ride our bikes to the baseball field.
I haven’t been doing much cardio lately since my hip has been bothering me so I thought it would be nice to see if the biking bothered me. I’m not sure of the mileage but I’d guess it’s about 8 miles round trip. It took us about a half hour to get to the field.
My hip didn’t bother me but my quad hurt. All in all, it wasn’t too bad. After the game, Danny took the kids to get haircuts so I rode home by myself.
Last week at Whole Foods, I picked up some Van’s Power Grains waffles so I’ve been having those for breakfast for the past few days.
I like to make a wafflewich out of one but adding a little bit of peanut butter and topping it with blueberries – so good!
I’m off to teach BodyPump this morning and later tonight my family is coming over to cook out and watch the Hawks game! Go Hawks!!
