Yesterday afternoon, I finally made the spinach pizza sandwich that I saw on Pinterest. I plugged inÂ George to heat up and then I assembled my sandwich.
I really like the Aunt Millie’s slimwiches because they are a little thicker and doughier than regular sandwich thins. And they only have 90 calories.
I topped one half with pizza sauce.
Then, I added spinach and a Babybel light cheese. I think this would also work well with shredded mozzarella cheese.
I put in on the George Foreman grill and grilled in for a few minutes – about 4-5 minutes until the cheese melted.
I ate it with some apple slices on the side. I knew this George Foreman grill would come in handy
I also baked cookies yesterday afternoon. I saw the peanut butter protein cookies on Run Eat Repeat’s blog, and they got me craving peanut butter cookies. I didn’t make mine with protein powder. I just made basic flourless peanut butter cookies.
Flourless Peanut Butter Chocolate Chip Cookies
- 1 cup granulated sugar
- 1 cup peanut butter
- 1 egg
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- Handful of chocolate chips
- Preheat oven to 350 degrees.
- In a bowl combine sugar, peanut butter, egg, baking soda, and vanilla extract. Mix well.
- Add chocolate chips and combine.
- Place spoonfuls of dough on a baking sheet and press down with a fork in a criss cross pattern.
- Bake in a preheated oven 8-9 minutes.
Make sure you don’t overcook these cookies or they will get to crisp. I cooked the first batch for about 9 minutes and they were perfect, although they appeared slightly underdone (they will continue to cook when cooling and harden a bit). I had enough dough to make about four more cookies and I baked them about 11 minutes and they were so crispy that I had to toss them.
I ate a few cookies and then had Danny take the rest to work. I like baking and eating a few cookies, but I hate having the leftovers sitting around the house.
