I had the most delicious breakfast this morning – a mini apple crisp!
For some reason, I went to bed last night wanting baked apples, which is weird because I rarely eat cooked apples, and I’ve only made apple crisp once in my life. So, when I woke up and was still thinking about those baked apples, I decided to make a mini apple crisp.
The recipe is so simple and easy to make, and it came out delicious!
Mini Apple Crisp – Serves 1 Calories: 104
Ingredients:
- Apple, peeled and cut into chunks (I used 3.5 ounces of a Honeycrisp apple)
- 1 tsp. brown sugar
- 1/2 tsp. cinnamon
- 2 tbsp. oats (I used Quaker Old Fashioned Oats)
Directions:
- Pre-heat oven to 350 degrees. Place apples in a small baking dish.
- Stir in brown sugar, cinnamon, and oats. (I stirred one tbsp of oats in with the apples, and sprinkled the other tbsp on top of the apples.)
- Bake in a pre-heated oven for about 20-25 minutes or until apples are tender.
That’s it! So simple and good! The best part – the whole serving is only 104 calories!
I ate my apples with a Greek yogurt for some protein.
Even though I ate the mini apple crisp for breakfast, I think it would make a wonderful dessert. I might start eating this as a dessert at night with a bit of vanilla Greek yogurt or even ice cream!

- Zumba – 60 minutes
- Stationary bike – 12 minutes
I had quite the workout this morning! Even though I still can’t dance and have no coordination whatsoever, I still really enjoy Zumba. The class is really fun and goes by fast.
After Zumba, I spent a little time taking a bike ride through the redwood forest.
After the gym, I stopped at the grocery store to pick up all the ingredients to make chili for our family chili cook-off on Sunday! Even though I don’t eat chili, I have Danny as my taste tester.
The grocery store is right across from Dunkin Donuts, so I had to stop in and pick up something that I saw on Facebook this morning…
Caramel K-cups! I had a Dunkin Donut gift card and this was the perfect opportunity to use it! I can’t wait to try one out tomorrow.
Lunch
Lunch this afternoon was an Amy’s frozen pizza, veggies with hummus, and strawberries.
I almost couldn’t find the pizza in our freezer, and I was starting to get crazy because I was really craving pizza. Luckily, after I dug every single thing out of the freezer, I found it hiding in the back. Yes! These pizzas a little higher in calories than my normal lunch, so I like to save it as a treat on a Friday or Saturday. 400 calories for the whole pizza and 16 grams of protein.
Archery
Jacob just started archery, and he loved it!

Weekend: 2 runs, 1 yoga class, lots of soccer (my 11-year old), dinner out with my in-laws (this is a good thing) and the Super Bowl!

I got a crock pot for Christmas and just tried out a recipe for slowed cooked oatmeal with apples and pecans, it’s really filling tastes great and only 124 calories per serving!
You’ll have to share the recipe! That sounds delicious!
Here you go: Put 2 peeled. chopped up apples, 1/3 cup brown sugar, 1 tsp cinnamon in the bottom of the crock pot. Pour 2 cups of oatmeal and 4 cups of water on top. Do NOT stir. Cook overnight for 8 – 9 hours on low.

Oh, the recipe didn’t call for pecans but I just chopped up and threw in about 10 pecan halves, everything tastes better with pecans!

I just came to your blog to see how you made the apple crisp. It is 8pm and I am dying for some dessert but I want to keep it healthy. 20 minutes needs to hurry up and pass, lol!! I want to eat it NOW!!!
I made another one last night too! Helps with my sweet tooth! Let me know how it comes out. My second time making it came out a little drier than the first and im not sure why!
