Pumpkin Peanut Butter French Toast

Since the weekend and Halloween activities are over, life can get back to normal…until next weekend, anyway.

Yesterday’s Workout

  • Elliptical – 18 minutes (am)
  • BodyPump – 60 minutes (am)
  • Spin – 48 minutes (pm)
  • 1.52 miles – pink treadmill (pm)

We’re on the third week of Bingo at my gym.

So far, I’m going strong. I turned two Bingo cards in the first week and two Bingo cards in the second week. I actually completed three Bingo cards the first week, but I forgot to turn the card in until Monday, and they have to be turned in by Sunday to count. So, that kind of sucked, especially because they post all the results of everyone that has signed up for Bingo, and I would have been in the lead.

Wow, I’m really competitive all of a sudden! Each week is a new and different Bingo card, so they don’t carry over from week to week.

I haven’t won a prize yet but that’s okay because the prize that I really want is next week’s prize which is a 30 minute nutritional consultation. Oh, and the final prize is a gym membership, so that would be nice too.


I bought a big can of pumpkin because my grocery store didn’t have the normal size cans, so I have a lot of pumpkin to use up. Does anyone know how long it will stay good for in the fridge?

This morning, I was making my normal peanut butter french toast, and I saw the canned pumpkin in the fridge, so I decided to add about a tablespoon of the pumpkin to the egg mixture that I dipped the pieces of bread in. It came out really good with the perfect pumpkin flavor.

I had some Honeycrisp apple slices on the side. My day really isn’t complete without a Honeycrisp apple, or two…or three.

I had a companion at breakfast this morning.

She loves her bagels.

  • 1.3 miles treadmill
  • Butts and Guts Class – 60 minutes

  1. I think I would have to pick french toast, especially as a special occasion food. YUM!

    Breakfast for me this morning was coffee. Actually, that is all I have eaten today. I am not feeling well and my appetite is gone. That is how I know I am truly sick as I almost ALWAYS want food, lol!

    No workout for me either…BOO!!! I think I would be in trouble of passing out or having an asthma attack if I tried. I am ready to feel normal again.

    French toast!!!! I hadan cinnamon raisin english muffin with a dab of cinnamon butter and a cup of fesh strawberries! My workout was my tues am bowling league! Bowling for 2 hours counts as a workout-right? Have a great Heather and feel better Fit Minded Mom!

    You can freeze the pumpkin to keep it fresher longer. Measure out desired amounts and put in baggies or you can freeze in ice cube trays and then pop out the cubes to put in bags. The cubes are great to add to smoothies or use in baking.

  5. Do I have to just pick one, love them all. I love using pumpkin in as many things as I can.

  6. This morning I had overnight apple pie oats.. so good! I think I’d have to go with waffles! Love the endless ways you can make them :).
