Peach Pumpkin Oatmeal Parfait

  • Butts and Guts Class – 60 minutes

I never take classes at the gym on Sundays, but every Sunday my gym has a “pot luck” fitness class, meaning the class is different every week and taught by a different instructor. Well, today’s class was Butts and Guts at 8 am, so I decided to go.

Besides Body Pump, Butts and Guts is one of my favorite classes. Not only because I always need a little extra help in the butt and gut area, but because I love how the class is different every week and keeps things challenging and interesting.


I have been trying to think of ways to use the pumpkin butter that I recently bought, and today I decided to incorporate it my peach oatmeal parfait recipe. I followed the normal recipe for the parfait but made just a couple changes.

First, I omitted the Truvia that I normally stirred into the plain Greek yogurt and stirred in one tablespoon of pumpkin butter instead.

Next, I stirred a little bit of pumpkin pie spice into the peaches along with the cinnamon and brown sugar. Then, I made sure to add just a sprinkling of pumpkin pie spice to the top of the parfait.

It came out wonderful! I think the pumpkin butter added a nice light pumpkin flavor without being too overpowering.

Jaden is all ready for the first Bears football game of the season! Have a great Sunday!

  3. I don’t do pumpkin ever. I never liked the smell and then found out I am allergic to cloves..everything pumpkin has cloves.

    love the idea of peach and pumpkin! I actually have been thinking of what other flavors to try with pumpkin and I have peach chobani in my fridge, so I will def have to try this combo out! Thanks!

  5. Sometimes I work on Sundays, but mostly I’m off. Jaden is such a cutie!!!!! and I LOVE PUMPKIN ANYTHING!!!!!

  6. I do work out on Sundays. It’s one of the easier days to get a work out in. I love pumpkin and will sometimes make a pumpkin spread by heating a bit of canned up on the stove with spices and honey and then spreading over toast. No football for us thank goodness! I’m not a fan and amazingly neither is the Mr.

  7. Pumpkin or squash is awesome in baked goods – breads, cookies, etc to replace oils and butter. Great for using up the fall garden bounty ( you have to bake it first), or leftovers from roasted acorn or delicata squash dinner sides. It made all my muffins extra good last fall. Haven’t been baking this year, but I might have to get back into it for winter. And I love to run on Sundays, so my husband can watch our daughter while I stay out for some extra miles!

  8. I love to workout on Sundays! Usually that includes walking 2-4 miles, vinyasa yoga, and possibly some type of swimming.

    I love PUMPKIN everything! Williams & Sonoma has the best pumpkin pancake/waffle/bread mix.

    I only watch football if there is chips & dip involved.
