- Butts and Guts Class – 60 minutes
I never take classes at the gym on Sundays, but every Sunday my gym has a “pot luck” fitness class, meaning the class is different every week and taught by a different instructor. Well, today’s class was Butts and Guts at 8 am, so I decided to go.
Besides Body Pump, Butts and Guts is one of my favorite classes. Not only because I always need a little extra help in the butt and gut area, but because I love how the class is different every week and keeps things challenging and interesting.
I have been trying to think of ways to use the pumpkin butter that I recently bought, and today I decided to incorporate it my peach oatmeal parfait recipe. I followed the normal recipe for the parfait but made just a couple changes.
First, I omitted the Truvia that I normally stirred into the plain Greek yogurt and stirred in one tablespoon of pumpkin butter instead.
Next, I stirred a little bit of pumpkin pie spice into the peaches along with the cinnamon and brown sugar. Then, I made sure to add just a sprinkling of pumpkin pie spice to the top of the parfait.
It came out wonderful! I think the pumpkin butter added a nice light pumpkin flavor without being too overpowering.
