Grilled Veggie Wraps and Weight Loss Progress

Yesterday’s Dinner

Last night for dinner, I made grilled veggie wraps.

Using a grill pan on the stove, I grilled red and green peppers, red onions, carrots, and zucchini with a little bit of olive oil.

I used a multigrain tortilla spread with a bit of garlic hummus. I added my veggies on top and rolled it up. It ended up being too many veggies for one tortilla, so I used another one. Each tortilla is only 60 calories, so it didn’t really break the calorie bank.

Delicious! Next time, I think I’ll add a bit of feta cheese.

After dinner, we decided to hit up Yogli Mogli for some frozen yogurt.

I am back on track with healthy eating, so I made sure that fro-yo fit into my daily calorie count. I don’t think it’s “bad” to have a treat everyday, I just make sure that I’m not going over my calories by having a treat.

I usually estimate the calories in my fro-yo because I’m still not sure how to figure out the calorie count of the toppings – ummm…a spoonful of chocolate chips, a dash of graham cracker crumbs, strawberry slices, boba balls, three cheesecake bites, and a squirt of chocolate sauce. (my fro-yo toppings are all over the place).

Today’s Workout

  • BodyPump
  • 1.25 miles walk outside with the kids (aka – a slow walk)

I didn’t go to BodyPump on Monday, so it was nice to get back to it today. Oh, and I forgot to mention that Danny was soooo sore from going to BodyPump on Friday. He could hardly walk all weekend. It was slightly humorous to watch him so up the stairs. But I feel his pain, so I only laughed in my head.

  1. YOU LOOK FABULOUS! That’s awesome–the pictures really show off all your efforts! Good for you!

    I love hummus, and eat it almost every day. I use it as “dressing” on my salad (I take a big scoop, and add just enough water to make it work like a dressing). It’s so good! Otherwise, I use it in wraps, like you did. :)

    Okay, I need to start taking all meals at your house. That veggie wrap looks really yummy! I am grilling my veggies from now on…what threw me was ” using a grill pan on the stove”. I think I need to get one of those, do they sell those all over? You look absolutely fabulous Heather. Hummus is okay but I don’t always think to buy it. I am making turkey burgers for dinner.

  6. I’m not a big fan of hummus but I love to eat my veggies in vegetarian fajitas – brown rice, black beens, onions, peppers, a sprinkling of cheese and spicy salsa. You will never know there wasn’t any meat.
