Peach Oatmeal Yogurt Parfait


Last night, the four of us went on a family walk. Well, Jacob rode his skateboard, and Jaden rode his bike. Danny and I walked.

Jacob was very insistent that his skateboard make it onto the blog:

We walked for about 2.5 miles. It’s been a while since we just went on a nice leisurely walk, and I missed it. I used to try to walk everyday, but sometimes life gets busy. I’m going to try to start walking more.


Yesterday and today, I made one of the tastiest breakfasts that I’ve ever made – a peach oatmeal yogurt parfait.

I woke up the other day craving peach oatmeal. This is weird because I have never even had peach oatmeal before. I decided just to roll with it and made this delicious peach oatmeal recipe.

Peach Oatmeal Yogurt Parfait (serves 1)


  • 1/4 cup oats
  • 1/4 cup almond milk
  • 1/4 cup water
  • medium-sized peach, peeled and chopped (I got 3 oz. out of my medium peach)
  • 2 tsp. brown sugar
  • 1/2 tsp cinnamon
  • 1 container Chobani plain Greek yogurt
  • 1 truvia packet (optional)


  1. Peel and chop peach. (You could also leave it peeled. I decided to peel mine).
  2. In a small bowl, combine peach, brown sugar, and cinnamon. Cover and set aside.
  3. Combine water and milk in a small sauce pan and bring to a boil. (You could use all milk or all water). Add oats and cook five minutes, stirring occasionally. Remove from heat.
  4. Mix the truvia into the plain yogurt. (You could skip this step because the peaches are so sweet)
  5. Spoon the oatmeal into a glass, add the peaches, and then spoon on the yogurt. I topped mine with a few peaches and a dash of cinnamon. Enjoy!

Calories: 249    Fat: 2.3 grams   Protein: 21.6 grams

This recipe is going on my breakfast rotation list. I loved all the different textures and flavors and thought they worked really well together.


I’m thinking about skipping BodyPump this morning, and just run/walking on the treadmill. I love BodyPump, but my body has been so sore these past few days. I think BodyPump three days a week, plus the strength training that we do for the Biggest Loser is taking a toll on my body, and I may need to cut back a bit.

This afternoon, I’m taking the kids to see the new Diary of a Wimpy Kid movie. I’m actually really excited. We’ve seen the other two movies, and Jacob and I have read all of the Diary of a Wimpy Kid books. I know they are children’s books, but they are so funny!


I think it’s important to read whatever you enjoy and always encourage kids to read. If they don’t enjoy it, they’re not going to want to read it. No one likes being forced to read something, and I think that takes the enjoyment away.

I love reading books whether they’re children’s book, young adult books, classics, or murder mysteries. If I enjoy it, then I’ll read it. This is why I have read The Diary of a Wimpy Kid series, The Percy Jackson series, The Hunger Games, Twilight, etc. But I also read “grown-up” books like Stephen King, Agatha Christie, and Nora Roberts. I read what I enjoy.

And I believe that kids should be encouraged to read whatever they like – books, comics, the sports page. Jacob reads anything he can get his hands on – cereal boxes, the comic section of the newspaper, the dictionary, medical books.
