Lower Calorie Peanut Butter French Toast

Yesterday’s Evening Workout

  • 2 miles treadmill
  • Biggest Loser circuit workout

Yesterday was one of those days where the kids just weren’t listening and bouncing off the walls, stressing me out. By the time Danny got home from work, I was more than ready for a little time to myself, and went to the gym early for my Biggest Loser group workout. Since I was there 30 minutes early, I walked/ran on the treadmill.

But really, working out really helps me kind of calm down and lets me zone out to music or Jenna Marbles videos on YouTube. Even 15 minutes of working out can make a difference in my stress levels. And with two energetic kids at home, plus my niece who loves to get into everything (even though she’s the easiest of the three and the cutest, sweetest baby!) I need a way to relieve stress that doesn’t include eating a pound of chocolate.

After the treadmill, I did the Biggest Loser group circuit workout. We did circuits of cardio, abs, and strength – repeating them for about an hour. And by the time I got home, the kids were in bed.


I came home and ate dinner after my workout. I am still trying to figure out this working out and eating at night thing. I don’t eat before I go to the gym because my stomach will be too full to workout, so that means that I don’t eat until afterwards at 8:20 pm. And I feel like that’s kind of late to be eating dinner.

I had parmesan crusted tilapia, broccoli, and brussels sprouts.

For “dessert” I had grapes and strawberries. I honestly don’t count fruit as a dessert, but sometimes it helps curb my sweet tooth so I don’t eat a gallon of ice cream.

Today’s Workout

  • Butts and Guts class – 60 minutes

My workouts are so predictable. Every Tuesday is Butts and Guts class. I just really like the class and how it’s different every week. Today we did cardio and some work with the body bar and light weights.


I was really craving peanut butter french toast this morning.

I love french toast but the calories in it can really add up, so I have experimented and found a way to make it a little lower calorie without sacrificing taste. For my peanut butter french toast I use:

  • 2 slices of healthy life bread – 70 calories
  • 1 egg white – 17 calories
  • splash of almond milk – approx. 8 calories
  • approx. 1/2 tsp. cinnamon – 3 calories
  • 2 tsp. simply jif peanut butter – 63 calories
  • 1 tbsp. lite syrup – 25 calories

Total Calories: 186 calories

To make it a more well-rounded breakfast, I added sliced strawberries and a Chobani Greek yogurt. Plus, adding the extra protein from the Greek yogurt helps keep you fuller longer.

I love the strawberry Chobani yogurt. Strawberry is such a classic flavor, that you can’t help but love it.

Today, we’re going to pick up my niece and then the kids have their first day of tennis lessons later. They have been asking me forever to take tennis, and I finally signed them up. It’s only twice a week for two weeks. But I don’t really think they’re interested in learning the fundamentals of tennis, they just want to whack tennis balls really hard.

    I try to read or just chill to relax. Or a massage! Tried the French toast a few days ago and my daughter and I loved it!!!

  3. I love french toast and peanut butter so why have I never put the two together?! My workouts are pretty much the same right now since I’m traning for a half-marathon, but I’m looking forward to mixing it up a little more once that is done.
