Peanut Butter Chocolate Chip Cookies

I was in a baking mood this afternoon, so I found a recipe for peanut butter chocolate chip cookies on allrecipes.com. I pretty much followed the recipe, I just made a couple of adjustments. We were out of butter so I used Earth Balance, which is just a dairy-free butter. These cookies came out so moist, chewy, and delicious.

Peanut Butter Chocolate Chip Cookies


  • 1/2 cup Earth Balance (or butter), softened
  • 1/2 cup natural peanut butter
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 2 tablespoons light corn syrup
  • 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips


  1. Preheat oven to 375 degrees F.
  2. In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla.
  4. In a separate bowl, combine the flour, baking soda, and salt. Stir into the peanut butter mixture. Fold in the chocolate chips.
  5. Drop by spoonfuls onto an ungreased cookie sheet, approx. 2 inches apart. Bake 8 minutes. Allow cookies to cool for a minute before moving them to wire racks to cool completely.
  6. Enjoy!


I ate three of these as soon as they came out of the oven. My son ate two and asked for more. By the time Danny gets home from work there might not be any left…

Nutella & Ornaments

Yesterday’s Workout: BodyPump

Yesterday morning was a new BodyPump release! A new release means new songs and new workout moves for each muscle group. It was a nice change to incorporate some different moves. The last release is still my favorite though.

I have been wanting to try Nutella for a while now, but kept putting off buying a whole jar. Then the other day at Wal-Mart I found these Nutella & go packs and picked one up to try.

I finally threw it in my purse this morning to take with me for a snack while I was doing a little Christmas shopping. I don’t know why I waited so long to try Nutella - it was delicious! And I loved the little breadsticks that came with it. The only bad part was that I ran out of breadsticks before I ran out of Nutella & had no way to get the rest of it out.

I kind of wanted to lick the rest of the Nutella out of the container. But I restrained myself…maybe.

Switching subjects…

We finally finished decorating our Christmas tree! We ran out of lights, and so many stores were out of them, but we finally found them and got them up on the tree. I love putting up all the ornaments and the memories that are associated with some of them.

Here are a few of my favorite ornaments.

My goose ornament. My dad always called me “goose” growing up (hopefully it wasn’t some kind of Maverick reference), so this ornament is really special to me:

This ornament was the first ornament that my husband and I got together while we were dating.

Each year we all pick out a new ornament, and the second year we were dating my husband and I picked out a fat gingerbread man & woman. I love them.

A cinderella carriage from the year that we were engaged.

This ornament is from when I was pregnant with my youngest son. There’s a question mark for the name because we weren’t telling anyone his name until he was born. I love that the pregnant mama has ice cream and pickles.

Danny’s Cubs ornament. You can’t have a Christmas tree without a Cubs ornament. My dad might argue on that one… oh, the life of a girl with a husband that’s a Cubs fan & a dad that’s a Sox’s fan.
