Peanut Butter Blossoms

Yesterday, I tried out another cookie recipe for The Great Food Blogger Cookie Swap. I love these cookies, but didn’t think that the Hershey’s kisses would hold up too well during shipping. So, here’s the recipe!

Peanut Butter Blossoms

Ingredients:

  • 48 Hersey Kisses
  • 1/2 cup shortening
  • 3/4 cup peanut butter
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 1 egg
  • 2 tbsp. milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • Granulated sugar

Directions:

  1. Preheat oven to 375 degrees.
  2. In a large bowl, beat shortening and peanut butter until well blended.
  3. Add granulated sugar and brown sugar; beat until fluffy. Add egg, milk, and vanilla extract. Beat well.
  4. In another bowl, stir together flour, baking soda, and salt. Gradually beat into peanut butter mixture.
  5. Shape into 1-inch balls and roll into sugar. Bake approximately 10 minutes. Immediately press Hershey’s kiss into center of cookie. Cool on a wire rack.

Notes: I got this basic recipe from the Hershey’s website, but I used Jif Natural peanut butter instead of Reece’s. Also, I put the Hershey’s kisses into the freezer while I was mixing the dough and unwrapped them while the cookies were cooking. That way when you put the kiss into the hot cookie, it doesn’t melt a lot. It will get soft though.

 Workout and Lunch

I went to a BodyPump class this morning, I’m still waiting for those lunges to get a little easier. Anytime now would be nice.

And for lunch I had the usual – two egg whites and Muenster cheese on an everything bagel thin. And today, I also had a pear. Ha! I bet that surprised you! I bet you thought that I was just going to eat another boring bagelwich sandwich.

Nope! I also had a pear. How’s that for excitement?

Today’s activities include some more shoe shopping – my son is getting new shoes. I didn’t get them last Friday because I was hoping that they’d go on sale because I’m cheap like that. So, we’re going to get them today. And it’s all good because I have a coupon.

This is the first pair of shoes that my son actually wants. Usually, I just buy his clothes and shoes and he could care less about what he wears. But now he cares about his shoes. Awww…I guess he’s growing up.
