I love Noodles & Co.’s Pasta Fresca, but there isn’t one located very close to us, so I have learned to recreate the pasta dish at home. It’s a bit different in taste from Noodle and Co.’s pasta, but it’s still awesome. Especially when I use lots and lots of feta.
- 12 oz. penne pasta
- 2 tsp. olive oil
- 4 cloves garlic
- 1 cup broccoli
- 1 cup red onion
- 1 oz. baby spinach
- feta or parmesan cheese
- 1/4 cup olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. white wine
- 1/2 tsp. salt
- In a large pot, boil water and cook pasta according to package directions.
- In a small bowl, whisk together vinaigrette ingredients (olive oil, balsamic, white wine, and salt) until well blended.
- In a large skillet, heat 2 tsp. olive oil over medium-high heat. Add garlic and saute 1-2 minutes. Add broccoli, onion, and cooked pasta.
- Saute approximately 5 minutes until pasta browns. Then add spinach and vinaigrette and saute another 3-5 minutes.
- Remove from heat and top with feta or parmesan cheese.
After dinner, I had the best ice cream – peppermint! I love peppermint ice cream with little candy cane bits in it. I wait all year for this stuff.
And yes, that it a platypus on the floor. Normal stuff.
I was up early this morning because my kid’s had a tournament for karate. I had a cup of coffee and ate about 17 bowls on the Bear Naked Maple Nut cereal. I love that the maple flavor really stands out, and it has 5 grams of protein! I can’t wait to try the honey nut flavor.
After breakfast, we headed out to the karate tournament. My younger son was up first and it took a bit of coaxing to get him to stop hiding under his coat and screaming that he didn’t want to be there.
Then he got up there and did his thing.
My older son was up next and signed up to do sparring. I love that I’m paying money for other kids to punch my son in the face. I guess, on the other hand, he gets to punch other kids in the face too, so it all works out.
Let the punching and kicking and beating each other up begin!
He did really good and I am so proud of both my boys!
My younger son supported his older brother the best way he knows how – by sprawling out on the floor and playing his video game.
Then it was trophy time!
This afternoon, Danny and I are going to see Footloose. You mean we’re going to see a grown-up movie without kids, like a date? What’s the occasion? This date thing is very foreign to me – it doesn’t happen a lot.
My mom’s taking the kid’s to a movie, and you better believe I am going to take advantage of that. Footloose here we come! I can’t wait to country line dance all the way home!
