Pumpkin Chocolate Chip Cookies

I love the fall season. I love the cool weather, the pretty changing leaves, the upcoming holidays, and especially fall foods. Fall always makes me think of pumpkin recipes.

I made these pumpkin chocolate chip cookies the other day, and was pleasantly surprised at how good they turned out. I am more of a cook than a baker because I like to throw in whatever ingredients I want, whereas with baking you need to follow the exact recipe and measure ingredients out and all that hard stuff.

The first batch I baked was undercooked. I added a few extra minutes to the next batch and they came out perfect!


  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/8 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tbsp melted butter
  • 1 egg white
  • 2 tbsp pumpkin puree
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chips


This may seem like a small amount of pumpkin, but it’s not. You will definitely taste the pumpkin. I might even consider adding 1 1/2 tbsp of pumpkin puree, so the pumpkin isn’t too overwhelming.

I used a lot of chocolate chips, because I love chocolate. Feel free to adjust chocolate chips according to your taste.


  1. Preheat oven to 350 degrees. Spray cookie sheet with cooking spray. (Or use a baking liner.)
  2. In a bowl, combine the flour, baking soda, salt, and pumpkin spice. Stir.
  3. In another bowl, whisk the granulated sugar, brown sugar, butter, egg white, pumpkin puree, and vanilla extract.


               4.     Whisk the dry ingredients into the wet ingredients.

               5.     Whisk in the chocolate chips (eat a few as you pour them in)

               6.     Drop by spoonfuls on the cookie sheet, about 1 inch apart. 

              7. Bake 11 – 13 minutes. Cool on cookie sheet approx. 5 minutes. Then transfer to a wire rack to cool.
