Veg Out

This morning I decided just to run a couple miles because my husband and I take kickboxing tonight and it’s killer on my legs!

Getting ready to run:

So my son, the jogging stroller, and I went out to the local running trail that we normally go to.

I ran a short 2.2 miles then stretched for 8 minutes while my son played at the park that he watches the whole time I run. Yes, I stretched for exactly 8 minutes. I try to do 10 minutes, but sometimes I get so bored that I just have to stop.

 

Afterwards, I had Marathon Snickers bar, same as yesterday. Pretty tasty and I couldn’t help myself.

We stopped at the store after the park, and my son found this little cutie that he just had to have:

A mini pumpkin! A mini pumpkin in August?! I tried to talk him out of it, but to no avail. He needed that mini pumpkin.

Me getting suckered into buying the mini pumpkin:

Hey, it was only .69 cents.

Lunch today was another veggie sandwich, just like yesterday. I am a creature of habit, I guess. But today’s veggie sandwich was a roasted veggie sandwich. And I liked it way better than yesterday’s sandwich.

First, I roasted red, green, & orange peppers, and onions with a little bit of olive oil and balsamic vinegar.

Then I piled all the veggies on a whole wheat roll and topped it with a slice on provolone cheese and stuck it under the broiler for 2 minutes.

Perfection:

I added a few spinach leaves on top and had pickle slices & cherries on the side.

Off to get ready for kickboxing!
