Orzo & Spinach Salad

Today was a busy one! After going to the grocery store, we got haircuts, and ate lunch at Panera. I ordered the same thing that I always do. I am a creature of habit, I guess. A Mediterranean veggie sandwich, hold the tomatoes, and a caesar salad, dressing on the side. And a frozen cherry lime-ade to drink. Yum!

For a snack this afternoon, I had a Snickers Peanut Butter Squared. When I first tried these I was mad that there were two little squares instead of one big bar, but I have come to like the squares better. This was I can eat one square and save one for later! I had one square last night and had the other one this afternoon. This peanut buttery squares are so delicious!

Now we’re going to a BBQ at my dad & stepmom’s house. I am bringing  Orzo and Spinach Salad. The first time I made it they were like ewww orzo, what’s that? Orzo, is just pasta, my friends, just pasta. So they tried it & love it, and now request that I bring it every time. Hey, it is delicious.

Spinach and Orzo Salad

Ingredients:

1 (16 oz) package orzo pasta

1 cup baby spinach, chopped

8 oz feta cheese

1/2 cucumber, chopped

1/2 red onion, chopped

1/2 tsp dried basil

1/4 tsp ground pepper

1/2 cup olive oil

1/2 cup balsamic vinegar

splash lemon juice

Directions:

1. Bring a large pot of lightly salted water to a boil. Add orzo and cook about 8 mintues. Drain and rinse with cold water. Transfer to a large boil.

2. Stir in spinach, feta, cucumber, onion, basil, and pepper.

3. Whisk olive oil, balsamic vinegar, and lemon juice in a small bowl.

4. Toss pasta with olive oil and balsamic vinegar and lemon juice. Refrigerate and serve cold. Enjoy!
